Abstract

Process comprises filtering the liq. foodstuffs through a membrane; recovering the microorganisms held on the membrane placing them in contact with a radioisotope-labelled nutrient medium for a predetermined length of time, then removing them and measuring the radioactivity absorbed. Process is esp. suitable for quantitative determination of wild yeast in beer and is more rapid and sensitive than microscopic examination. The pref. radio-labelled cpds. in the medium are 14C lysine, arginine, glutamic acid, methionine or chlorella protein hydrolysate and the nutrient medium is contained in an absorbant plug.
