Abstract

The milk to be demineralised is stored in a reservoir after sterilisation; it is pumped to another reservoir whence it is sent to the electro-dialysis cell and back again. Other reservoirs are placed alongside with another to contain the milk in which the concn. of the mineral matter has been reduced to the desired level. Even with a small number of cells the necessary demineralisation can be effected without any demineralisation can be effected without any deterioration in the prod. obtd. and with only a short retention period of the material in the plant. Each cell comprises a number of connected chambers and several similar chambers of aq. sodium chloride. These chambers are arranged alternately by the intermediary of several cation and anion exchange membranes; these are interposed between the external chambers and the chambers contg. a positive and negative electrode respectively. Devices are provided for measuring the electrical conductivity of the mineral matter in the liq. in the reservoirs.
