Abstract

In a bread-making process in which lumps of dough are retained for a period in a conditioning cabinet, the cabinet has removable support shelves each with a number of dough lump pockets which may be adjusted in capacity to suit the size of loaf. The shelf is made rather like a stretcher, having a rectangular frame with two long side bars joined at the ends by two transverse, spacer bars, and a sheet of flexible material, such as suitably-treated felt, hanging loosely between and attached to the side bars; the sheet is divided into hammock-like pockets, each to take a dough lump, by a series of longitudinally-adjustable cross bars extending between the side bars to support the sheet which sags between adjacent cross bars.
