Abstract
The emulsifiers, which are easily handled and homogenously dispersed in water at ordinary temps. are prepd. by dispersing liquid, paste or solid lipophilic emulsifiers in water in the presence of a hydrophilic colloid, and drying. The emulsifiers may be used with bread, cakes, biscuits, oatmeal, spaghetti, dairy products etc.
