Abstract

A flavouring material for bakery products, possessing the aroma of freshly cut bread, is obtained by (1) wetting cereal grains and allowing them to stand for 6-24 hrs., at a temp. of 30-50 degrees C and (2) heating them at a temp. between 120 and 250 degrees C. It has a long storage life and is used in amounts of up to 10%.
