Abstract
Process for manufacturing soft, creamy cheeses of the Camembert type comprises a continuous conveyor for the milk and/or curds, containers arranged on parallel strands. The latter are horizontal and superimposed; they have decreasing lengths from the upper part of the machine, where the containers are filled, to the lower portion where they are transferred to further processing posts. The containers, arranged in batches of 40 in a frame, pas through two cutting stations, where the curd is cut by cutting blades, to a post where each container is capped with a mould, with a perforated bottom, and inverted. The moulds are the removed for subsequent treatment while the containers, after going through a washing post, return again to the filling post. The machine takes up little room and allows the biochemical processes to develop at the requisite degree of slowness required to produce good quality Camembert cheeses.
