Abstract

Tenderising device has a set of cutting elements which are forced into the meat under hydraulic pressure, so that if any one of the elements encounters a resistance exceeding a safe, preset limit, it proceeds no further and will thus avoid mechanical damage. The meat for tenderising is preferably supported on a conveyor arranged for limited longitudinal and lateral displacement between piercing operations by the tenderising blades.
