Abstract
Esillä oleva keksintö koskee menetelmää stabiilin öljyä-vedessä-emulsion tuottamiseksi tuomalla käyttöön mekaanisesti fibrilloitu mikrokiteinen selluloosa (MCC) vesipohjaisena geelinä pH:ssa 4 —7 ja sekoitetaan se kasvi- tai luuöljyn kanssa selluloosa-öljy-suhdelukuun 1:1-1:20 ja homogenoidaan seos korkeassa paineessa siten, että tuotetaan stabiileja emulsioita, joista puuttuu synteettiset kolloidaaliset lisäaineet ja kemikaalit Keksintö koskee myös näin tuotettuja öljyä-vedessä-emulsioita, jotka soveltuvat käytettäviksi muun muassa rasva- ja öljypohjaisissa elintarvikkeissa.
