Abstract

The method for killing and preserving fish in the fresh state proposed by the invention is a two-stage process. In the primary, rapid-chilling stage, the fish are killed instantaneously by the shock of immersion in a rapid- cooling fluid. Said fluid subjects the surface layer of each fish to a temperature below that at which it will be stored. In the secondary or storage stage, the fish is chilled passively inside by means of its low-temperature surface layer or is cooled inside and outside with external means. The apparatus for killing and chilling fish proposed by the present invention for embodying the method indicated consists of the following: a rapid-cooling hopper for distributing fish to the system, a primary rapid cooling tank for killing the fish instantly, and a device connected to the primary rapid chilling tank for discharging the fish to the cold-storage tank of the secondary stage. The live fish are introduced into the system via the rapid-chilling hopper, are killed by means of the shock of instantaneous chilling in the primary rapid cooling tank, and are then passed on to the cold- storage tank of the secondary stage with the discharge device.
