Abstract
The process consists of (a) washing chufa tubercles in a germicidal soln. in a continuous process; (b) rinsing with potable water to completely eliminate the ppted. germicide; (c) soaking for 12 hours to achieve sufficient water absorption to facilitate the trituration process; (d) grinding to a pulp with high water content; and (e) filtering through sieves to produce a milky liquid with the physical characteristics of horchata.
