Abstract

PROCEDIMIENTO PARA LA PREPARACION DE GOMA DE XANTANO DE FLUJO LISO, BAJA EN CALCIO. CONSISTE EN HACER FERMENTAR UN CULTIVO DE "XANTHOMONAS CAMPESTRIS" EN UN MEDIO ACUOSO, QUE TIENE COMO MAXIMO 4 PPM DE IONES DE CALCIO POR CADA 1 POR 100 DE GOMA DE XANTANO EN CALDO DE FERMENTACION Y AÑADIR AL MEDIO DE 0,7 A 1 POR 100 DE FOSFATO DE SODIO O DE POTASIO. EL FOSFATO PUEDE AÑADIRSE AL PRINCIPIO DEL PROCESO DE FERMENTACION, O REPARTIDO AL PRINCIPIO Y AL FINAL DEL PROCESO. TIENE UTILIDAD PARA MEJORAR LA SOLUBILIDAD EN LAS MEZCLAS SECAS RECONSTRUIDAS COMO BEBIDAS DE CACAO Y PARA MEJORAR LAS PROPIEDADES DE FLUJO Y TEXTURA EN JARABES, PASTAS DENTALES, MERMELADAS, ETC.
