Abstract
Improved process for the recovery of protein from an aqueous solution whose ph is in the range of from about 6 to 12 in which an acid is added to the solution to reduce its ph sufficiently to precipitate the protein in the form of curd and the protein is washed with an organic solvent miscible with water to remove undesirable color and flavor components or before or after precipitation of the curd, the improvement of which is to provide a series of n zones where n is an integer number of at least 1 and in each of which the curd washed with solvent is intimately mixed with water forming a mixture of liquid and curd, the mixture is passed to a separator and the curd is separated from the liquid, said areas being sufficient to reduce the amount of solvent in the curd to less than about 10% by weight of the liquid part of the curd.
