Abstract

A machine for making cooked, flat food products comprises a dough dispensing device in the form of a roller or an endless belt dipping into a container containing dough, a rotatable heating plate, which is either a cylinder or a section of a cylinder, in contact with the dough dispenser such that their relative movement causes a deposit of dough to be transferred from the dispenser to the heating plate, a scraper in the form of a blade rubbing against the heating plate for removing the food product and means for receiving the food product. The heating plate and dough dispenser may rotate in the same direction or in the opposite direction (direct meshing by means of teeth). The surface of either the dispenser or the heating plate may be smooth or may have a raised surface of any desired shape, e.g. circular. The shape engraved in relief may be connected to another such shape by a raised strip of the same height enabling the scraper to engage permanently against the heating plate. The second side of the pancake may be left uncooked in which case it is removed from the machine by means of an endless belt or the second side may be cooked either by exposure to infra-red radiation or by cooking on a second plate which may be flat, cylindrical, or a section of a cylinder. In Fig. 1 a roller 6, dipping in a vat of dought 1, transfers dough to one of two heating plates 24, 25, both the plates and the roller rotating in an anti-clockwise direction. The plates are rigid with shaft 26 which also drives two scraping cams 33 and 34 (not shown) which actuate the secured scraping blade 38 and by a system of pulleys and cables (not shown) the curved heating plates are connected to a motor 12 which also drives a flat heating plate 67. In operation, the heating plate 24, having been covered with dough, is arrested in the position shown and the flat plate 67 is in an extreme position on the exterior of the machine 96. In this position an electric contact stops motor 12 and starts a timer to allow the first side of the pancake to be cooked on plate 24. At the end of this time the flat plate 67 rapidly returns to its position shown in the diagram and the curved heating plate 24 continues its rotation until it reaches and passes through the position occupied by plate 25 in the figure. The cutting part of blade 38 is in contact with the heating plate 24 and unsticks the pancake allowing it to fall on to the flat plate 67 which is moving in the same direction and thus brings the pancake outside the machine at the end of its travel. In Fig. 18 an endless belt 165 on which the shape of a pancake is engraved in relief 164 dips into a vat of dough 172 and deposits a shaped amount of dough on a heating cylinder 161 heated from the inside by gas-jets (not shown). A scraper 163 removes the cooked product. In Fig. 19 the roller 177 divided into three strips dips into vat 175 and transfers dough to the first heating plate 179 likewise divided into three strips and heated on the inside by gas-jets (not shown). Scraper 181 unsticks the bands of dough which are then wound on a second cylinder 180 placed under the first and heated similarly, rotation occurring in the directions indicated. A moving bar 182 permits the removal of the bands of dough on to a travelling band 183.
