A process for producing a mildly proteolytic milk-curing enzyme, characterized by (a) being soluble in water; (b) because it is not dialysable; (c) because its milk curdling ability is destroyed by heating to about 60º C for five minutes, (d) having maximum stability at a pH of about 4.5; (e) by being precipitable from an aqueous solution thereof by ammonium sulfate; and (f) having an ionic electrical point of about 5.5, which comprises inoculating a medium containing carbohydrate, nitrogen and inorganic salt sources with a fungus of the species Endothia parasitica, allowing aerobic fermentation to take place until a substantial amount of said enzyme is produced and then recovering the enzyme thus produced from the fermentation medium.
