Procedure for preparing new amino acids, and especially a compound of the formula ** (See formula) ** wherein R1 is selected from the group consisting of hydrogen and alkyls; R2 and R3 are levyalkyls; R4 and R5 are selected from the group consisting of hydrogen and levialcanoyls; R5 is hydrogen when R4 is also hydrogen; X is taken from the group consisting of hydrogen, halogens, hydroxyl, light alkanoyloxy, levyalkyl and trifluoromethyl; and n is a positive integer less than 3 when X is hydrogen, halogen, alkyl or trifluoromethyl, and less than 2 when X is hydroxyl or alkanoyloxy; which comprises the reaction of a formula ketone ** (See formula) ** with ammonium carbonate and a water-soluble cyanide to form a hydantoin; the decomposition of the latter with barium hydroxide to form the corresponding methoxyphenyl amino acid; and hydrolysis by reaction with a hydrohalic acid; or alternatively, the reaction of the ketone with ammonium carbonate and a water-soluble cyanide to directly form an α-amino- α, β -dialyl- β -mononetoxi- or dimethoxyphenylalanine, and, if desired, esterification with a levialcanol in the presence of an acid catalyst, and optional acylation with a levialcanoic anhydride or an alkanoyl halide.
