Abstract

La presente invención se refiere a una composición iniciadora de la fermentación para un substrato que comprende al menos una cepa de microorganismos inmovilizados y al menos una cepa de microorganismos libres en un medio de suspensión. La presente invención también se refiere al procedimiento para la preparación y conservación de dicha composición iniciadora de la fermentación, al procedimiento para activar un substrato así como al uso de dicha composición para la producción de bebidas y alimentos, la producción de metabolitos y para el tratamiento de lixiviados o residuos.
