Abstract
Procedimiento para eliminar tiramina de diferentes fuentes. El procedimiento se basa en las reacciones catalizadas por los genes presentes en las agrupaciones génicas tyn y hpa de Pseudomonas putida U, partiendo de transformar tiramina y dopamina en 4-hidroxifenilacetaldehído y 3,4-dihidroxifenilacetaldehído, reacción que puede continuarse a los ácidos 4-hidroxifenilacético y 3,4-dihidroxifenilacético respectivamente, mediante las enzimas del cluster tyn y que, si se complementa con las enzimas del cluster hpa, permite la degradación y tiramina y dopamina en ácido pirúvico y ácido succínico. La invención se refiere además a las enzimas que catalizan el proceso, moléculas de ácido nucleico que las codifican, vectores que permitan su expresión y, especialmente a microorganismos recombinantes transformados con dichos vectores. Además, la invención se refiere al uso de microorganismos que posean los genes adecuados para expresar las proteínas implicadas en el proceso para reducir la tiramina y dopamina de alimentos.Procedure to eliminate tyramine from different sources.
