Abstract

Método de neutralización de aceitunas. Se trata de un proceso que permite la neutralización de las aceitunas, previamente sometidas a un tratamiento alcalino, mediante la aplicación de dióxido de carbono (CO2). Este proceso se lleva a cabo en un recipiente cerrado en el que se encuentran las aceitunas, en ausencia da agua, recipiente en el que se inyecta el gas y que es mantenido en sobrepresión. De esta manera se consigue la neutralización en vía seca, es decir evitando la clásica necesidad de utilizar agua, consecuentemente eliminando los clásicos vertidos, además de reducir de forma muy considerable el tiempo empleado para la neutralización.
