Abstract

The procedure is for obtaining a phenolic extract with a high concentration of anti-oxidants and involves the ultra-filtration of solutions derived from the preparation process of preserved table olives. Such solutions consist of sodium hydroxide, washing water, brine and the filtration is done with membranes having a pore size of between 1000 and 10000 daltons, the phenolic substances being adsorbed in non-ionic resins. The phenols are recovered using ethanol, evaporating the organic dissolvent and the resultant aqueous solution is treated with active carbon. The liquid is frozen at temperatures below 0 degrees Celsius and lyophilized.
