Abstract

The food pasteurising using air as temperature control agent comprises treatment of the food products (9) in a tunnel (1) by 4-8 bar air. Also claimed is a tunnel for use in the process. CLAIMED TUNNEL - The tunnel (1) has demountable heating modules (3), with pasteurisers (4), coolers (5), conveyors (6-8) and filters (not shown). EMBODIMENT - Fans, evaporators, condensers and compressors with controllers are also fitted.
