The low-cholesterol meat paste comprises a 12-16 per cent protein 4-36 per cent by weight product. The 48-80 per cent moisture content product corresponds to equivalent contents of 12-16, 70.5-81 and 6-8 per cent of saturated mono-unsaturated and poly-unsaturated fatty acids.
