Abstract

The invention describes a sequence of nucleotides corresponding to a structural gene of Thermus sp. T2 ATCC 27737 coding for a thermostable alpha-galactosidase (EC 3.2.1.22). Also indicated is a method to obtain a genetic construct for expressing said sequence of nucleotides in Escherichia coli cells by means of its cloning in an expression vector with the corresponding modifications in the sequences of nucleotides and amino acids resulting from manipulation. A method for obtaining enriched extracts with thermostable alpha-galactosidase activity in E. coli is also described. Due to the thermostable characteristic of the described recombinant protein, which makes it compatible with various technological processes, said recombinant protein can be used mainly in the agri-food and sanitary sector for the hydrolysis of poorly digestible alpha-galactosidase present in various widely consumed food products.
