Abstract

Salsas dietéticas a base de quitosano. Estas salsas contienen entre 1-10% en peso de un quitosano con un grado de desacetilación entre el 70-90%. La invención comprende también el procedimiento de fabricación de estas salsas y que consiste en la adición del quitosano a la salsa disuelto en una solución ácida débil a pH 4-6. La invención es particularmente de aplicación en salsas tipo Ketchup, en las cuales permite reducir el aporte calórico de la comida con la que se acompañe la salsa al secuestrar grasas que no son absorbidas por el intestino.
