Abstract

The removal of toxins from fish products by carbon dioxide comprises passage of a mixture based on supercritical CO2 (ethanol content 5-20 per cent by volume) through the products partly dehydrated by lyophilisation. The toxins (DSP) are destroyed at 150-300 bar pressure of CO2 mixed with acetic acid (5-10 per cent by volume). The reaction chamber, sealed for 30 minutes to several hours, is finally depressurized.
