Chocolate blando moldeable en lonchas, porciones y otros formatos y procedimiento para su fabricación. Producto alimenticio de chocolate con leche dulce de textura modificada que posee una consistencia firme que le permite ser moldeado en diferentes formatos y a la vez con características untables y con una pegajosidad limitada para evitar que adherido a los dedos al ser untado. El producto se elabora mediante la coagulación por enzimas coagulantes y el desuerado de una mezcla de leche tratada y cacao en polvo. Posteriormente se adicionan azúcares, materias grasas y agentes emulsionantes, sometiéndose a un tratamiento térmico con agitación. También pueden a adirse otros ingredientes opcionales que modifiquen sensorialmente el producto (saborizantes, colorantes) o bien nutricionalmente (vitaminas, aminoácidos) y otras sustancias que garanticen su periodo de conservación (conservantes, antioxidantes, antibióticos). A continuación al producto aún caliente se le da formato, se envasa asépticamente y se conserva en refrigeración.Soft moldable chocolate in slices, portions and other formats and manufacturing procedure.
