Abstract

Arroz semipreparado de larga conservación, procedimiento para su preparación y aplicaciones. Dicho arroz está constituido por granos individuales, deformados, íntegros, de color crema opaco cuyo almidón está gelatinizado y cuyos alfa-1,4 y alfa-1,6 glucopiranósidos están, parcialmente retrogradados, que se presente envasado al vacío en tarros de cristal cerrados herméticamente. El procedimiento comprende un primer tratamiento hidrotérmico del arroz para gelatinizar parcialmente el almidón, seguido de un primer choque térmico para retrogradar parcialmente dichos glucopiranósidos, tras el cual se somete a un segundo tratamiento hidrotérmico, envasado al vacío y un segundo choque térmico para obtener el producto final. Aplicación en la Industria Alimentaria.
