Abstract

Use of liquid cream or fluid milk cream as a covering means in fish preserves, which has not hitherto been used in Spain and which, with bromatological and organoleptic advantages, replaces conventional means of covering, making it possible to use fish which are nowadays thought to be of no value for preserves by markedly improving its flavour, smell, texture and appearance compared with covering means used hitherto. It is possible to achieve organoleptic and palatability characteristics which are very different from those which are currently the norm, converting fish preserves into a genuine ready-prepared dish. Its use in the industry will take place by means of suitable metering devices or by vacuum metering devices on normal working lines. Similar results are achieved with yoghurt and it is possible to mix in other ingredients and additives in order to produce all kinds of ready-prepared dishes.
