Abstract

The system consists in packaging the pieces of bread or pastry, prior to cooking, in preformed moulds of multi- layer plastic material, a vacuum being generated in the container which holds the piece of bread and the container being filled with an inert atmosphere formed by a mixture of gaseous nitrogen and carbon dioxide in different proportions. The pieces thus packaged may be preserved at ambient temperature without the need for chilling. Simple oven cooking for a few minutes makes it possible to obtain bread with the characteristics of freshly baked bread. The system is used for packaging pieces of bread or pastry prior to cooking, it being possible to preserve and store the product without the need for refrigeration or freezing.
