Abstract

Chewing gum and process for the manufacture thereof. It is made up of sorbitol gum base mannitol maltitol syrup glycerine powdered and liquid mint flavour carbamide gelatin titanium oxide lecithin menthol aspartame sodium fluoride and carnauba wax. The manufacturing process involves bringing the temperature of the gum base to 40 degree C followed by four kneading processes, each of them lasting five minutes and with the temperature of the material less than or equal to 48 degree C. The material is then cut into pieces, stored in a controlled atmosphere and extruded, laminated and moulded at a temperature between 48 degree and 50 degree C. The nucleos thus obtained are conditioned at 18 degree C and 48-50% relative humidity. The process ends with the application of a sugar coating to the nucleos, which, once they have been thus coated, are dried and go on to the final glazing.
