Abstract

A continuous multi-layer band is produced on moving belt by successive deposition through nozzles of a first layer of off white edible paste, a thin blackish cord near one of the edges of band, a second off white layer and finally an upper layer of blackish paste. The composite band is heated for conversion to a gel and stabilisation, and cut transversely into pieces simulating baby eels, with bands forming the body, band defining the back and the ends of each fragment of cord forming the eyes.
