Prepn. of dehydrated vegetables comprises submerging the vegetables in an aq. bath contg. NaHCO3 for 15-18 hrs. draining autoclaving in another soln. contg. salt at a b.pt. of 100-110 deg.C over 3-8 mins. cooling to ambient temp. and drying in air having a humidity of 50-60% at 50-65 deg.C for 6-9 hrs.
