Abstract

A chewing gum composition containing sweet protein and salt and having enhanced flavor. The sweet protein and salt are substantially physically separate in the chewing gum. The physical separation prevents the salt from suppressing the flavor and sweetness properties of the sweet portion. The salt is selected from sodium chloride, potassium chloride, or mixtures thereof. The salt is preferably present in the chewing gum in amounts between about 10 to about 1000 parts per million (ppm) by weight of the chewing gum. Various manufacturing methods for maintaining a substantial physical separation in the chewing gum are also provided.
