Abstract
The stuffings are based on anchovies, onions, tuna, or red and green peppers, with addn. of 2-7% salt, 0.3-0.6% lactic acid, 0.01-0.4% sodium alignate, 0.01-0.02% ascorbic acid, and opt. 0.06% citric acid, 0.01-0.3% guar gum, 0.25-0.5% sodium glutanate and/or inosinate and 0.03-0.05% potassium sorbate.
