Abstract
Verfahren zum Kühlen von entlang einer Kühlstraße (1) mittels eines daran vorgesehenen Produktförderers (3a, 3b) in Transportrichtung (T) transportierten Produkten (P), wobei zumindest eine entlang eines Abschnitts des Produktförderers (3a, 3b) vorgesehene Vakuumkühlstation (2a, 2b) die in sie auf dem Produktförderer (3a, 3b) hineintransportierten Produkte (P) mittels eines innerhalb der Vakuumkühlstation (2a, 2b) erzeugten Vakuums kühlt.

- Die vorliegende Erfindung bezieht sich auf ein Verfahren zum Vakuumkühlen von entlang einer Kühlstraße transportierten Produkten gemäß Anspruch 1. Ferner betrifft die Erfindung eine Kühlstraße zum Vakuumkühlen von Produkten gemäß Anspruch 5.

DE29607689U1 offenbart eine intermittierend arbeitende Tiefziehverpackungsmaschine mit einer Siegelstation, welcher in Transportrichtung eine mechanische Kühlvorrichtung nachgelagert ist, welche mittels daran gelagerter Kühlkissen von oben und von unten auf versiegelte Verpackungen drückt, um diese nach dem Siegelprozess stromabwärts der Siegelstation abzukühlen. - JPS57-1021A offenbart eine weitere intermittierend arbeitende Tiefziehverpackungsmaschine mit einer in Produktionsrichtung eingangs positionierten Formstation zum Herstellen von Tiefziehmulden, einer Siegelstation zum Herstellen von Verpackungen sowie einer zwischen der Formstation und der Siegelstation positionierten Vakuumstation, um darin eingeschlossenen Produkten Feuchtigkeit zu entziehen.

US2004/0105927A1 offenbart eine weitere intermittierend arbeitende Tiefziehverpackungsmaschine mit einer Pasteurisierungsstation, die in Produktionsrichtung stromaufwärts einer Siegelstation der Verpackungsmaschine positioniert ist. Innerhalb der Pasteurisierungsstation können darin ankommende Produkte mittels Dampfzufuhr heißbehandelt werden. Optional findet im Anschluss an den Pasteurisierungsprozess ein Vakuum-Kühlvorgang statt. -
EP4335759A2 offenbart eine weitere intermittierend arbeitende Tiefziehverpackungsmaschine mit einer Vakuumkühleinrichtung, die in Produktionsrichtung vorderhalb der Siegelstation entlang einer Einführstrecke positioniert ist. Entlang der Vakuumkühleinrichtung ist der Vakuumkühlprozess auf mehrere Vakuumkühlkammern verteilt, sodass sich die Tiefziehverpackungsmaschine mit einem Maschinenarbeitstakt betreiben lässt, welcher im Wesentlichen der Dauer eines Siegelprozesses an der Siegelstation entspricht. - Die vorangehend beschriebenen (Vakuum-)Kühleinrichtungen sind im Aufbau der jeweiligen Tiefziehverpackungsmaschinen integriert. Diese (Vakuum-)Kühleinrichtungen sind daher von der intermittierenden Arbeitsweise der jeweiligen Tiefziehverpackungsmaschine beziehungsweise von deren konstruktiven Aufbau abhängig. Dies kann zu erhöhten Herstellungskosten führen.
- Zum Kühlen von Backwaren werden in der Praxis lange Kühlstrecken eingesetzt, beispielsweise Kühltürme mit spiralförmig angeordneten Förderbändern, sodass entlang dieser Kühlstrecken transportierte heiße Backwaren an der Umgebungsluft abkühlen können. Die Kühlstrecken benötigen jedoch eine lange Streckenführung, um die Backwaren an der Umgebungsluft auf ein vorbestimmtes Temperaturniveau abkühlen zu können. Diese Kühlstrecken füllen deshalb einen relativ großen Bauraum aus und erfordern viel Zeit, um die heißen Backwaren abzukühlen. Zudem werden aufgrund der ausgedehnten Geometrie dieser Kühlstrecken dafür auch mehrere Antriebseinheiten benötigt, wodurch der Betrieb derartiger Kühlstrecken energieintensiv ist.
- Ferner werden in der Praxis Vakuumkühlschränke eingesetzt, die einen geschlossenen Kühlraum ausbilden können, um darin die auf einem in sie hineingeschobenen Transportwagen, daran auf Blechen abgelegten Produkte mittels eines Vakuums zu kühlen. Hierzu müssen jedoch die Backwaren zunächst auf Backbleche geladen, die Bleche in den Transportwagen geschoben und der Transportwagen in den Vakuumkühlschrank geschoben werden. Vor dem Vakuumkühlprozess müssen daher mehrere, insbesondere manuelle Schritte durchgeführt werden. In der Praxis werden derartige Vakuumkühlschränke primär in Bäckereien eingesetzt, um aufgewärmte Backwaren schnell auf ein gewünschtes Temperaturniveau abzukühlen, damit sie zum Verkauf zur Verfügung stehen. Die Ausbringung derartiger Vakuumkühlschränke ist jedoch gering.
- Aufgabe der Erfindung ist es, im Hinblick auf die vorangehend in Zusammenhang mit dem Stand der Technik beschriebenen Nachteile ein Verfahren sowie eine Kühlstraße zum verbesserten Kühlen von Produkten zur Verfügung zu stellen. Diese Aufgabe wird gelöst anhand eines Verfahrens nach Anspruch 1 sowie anhand einer Kühlstraße nach Anspruch 5.
- Vorteilhafte Weiterbildungen der Erfindung sind durch die jeweiligen Gegenstände der Unteransprüche gegeben.
- Die Erfindung bezieht sich auf ein Verfahren zum Kühlen von entlang einer Kühlstraße mittels eines daran vorgesehenen Produktförderers in Transportrichtung transportierten Produkten. Erfindungsgemäß ist vorgesehen, dass zumindest eine entlang eines Abschnitts des Produktförderers vorgesehene Vakuumkühlstation die in sie auf dem Produktförderer hineintransportierten Produkte mittels eines innerhalb der Vakuumkühlstation erzeugten Vakuums kühlt. Dadurch, dass einem Abschnitt des Produktförderers beziehungsweise einem Streckenabschnitt der Kühlstraße eine zum Vakuumkühlen konfigurierte Vakuumkühlstation zugeordnet ist, die die in sie auf dem Produktförderer hineintransportierten Produkte mittels des innerhalb der Vakuumkühlstation erzeugten Vakuums kühlt, kann die Kühlstraße insgesamt aufgrund der ihr zusätzlich zugeordneten Vakuumkühlstation einen bauraumreduzierten Aufbau haben. Das Verfahren zum Kühlen der Produkte entlang der Kühlstrecke lässt sich damit durch die entlang der Kühlstrecke arbeitende Vakuumkühlstation insgesamt bauraumreduziert und vor allem in energieeffizienter Weise durchführen.
- Das Verfahren wird insbesondere mittels einer als Kühlstraße ausgebildeten Kammerbandvakuumkühlmaschine durchgeführt. Diese kann als eigenständige Maschine unabhängig von einem Verpackungsprozess, sozusagen als Stand-Alone-Lösung, zum Zwecke der aktiven Kühlung von Produkten eingesetzt werden.
- Vorzugsweise wird das Verfahren zum Kühlen der Produkte entlang einer vom Betrieb einer Verpackungsmaschine ausgegliederten Kühlstraße, insbesondere mittels einer Kammerbandvakuumkühlmaschine, durchgeführt. Dieses Verfahren kann damit als "Stand-Alone"-Verfahren ohne Beeinflussung durch einen Verpackungsprozess ausgeführt werden, um Produkte, insbesondere Backwaren, zu kühlen.
- Insbesondere können die Produkte die Vakuumkühlstation in einer Richtung durchlaufen, sprich diese ohne Richtungsumkehr passieren, sodass sie nach dem Vakuumkühlvorgang entlang des Verlaufs der Kühlstraße weitertransportiert werden können. Dadurch können manuelle Arbeitsschritte reduziert und die Ausbringung gekühlter Produkte erhöht werden.
- Vorzugsweise wird an der Vakuumkühlstation zum Vakuumkühlen der in sie auf dem Produktförderer hineintransportierten Produkte mindestens eine Vakuumkühlkammer gebildet. Diese kann so ausgebildet werden, dass sie den Abschnitt des Produktförderers, auf welchem das Produkt aufliegt, hermetisch dicht einschließt, sodass er sich innerhalb der Vakuumkühlkammer befindet.
- Gemäß einer Ausführungsform der Erfindung ist vorgesehen, dass in Transportrichtung der Kühlstraße mehrere hintereinander angeordnete Vakuumkühlkammern zum intermittierenden Vakuumkühlen von auf dem Produktförderer durch sie hindurchgeführten Produkten gebildet werden. Diese Aneinanderreihung von mehreren Vakuumkühlkammern ermöglicht einen in kurzen Kühlintervallen stattfindenden Durchlauf der Produkte, sodass diese innerhalb kurzer Intervalle in Transportrichtung stromabwärts der Vakuumkühlkammern weiterverarbeitet werden können, um so beispielsweise in kurzen Intervallen einer nachgeordneten Verpackungsmaschine auf einem gewünschten Temperaturniveau zugeführt zu werden. Dafür wäre es denkbar, dass die gekühlten Produkte zunächst von einer der Verpackungsmaschine vorgeordneten Zuführeinrichtung aufgenommen werden, die beispielsweise als Puffereinrichtung für die Verpackungsmaschine, insbesondere für eine Tiefziehverpackungsmaschine, arbeitet.
- Denkbar wäre es, dass der Produktförderer auf ein vorbestimmtes Temperaturniveau beheizt wird. Dadurch ließe sich Niederschlag von Wasserdampf auf dem Produktförderer reduzieren, der beim Vakuumkühlprozess durch das dabei innerhalb der Vakuumkühlkammer erzeugte Vakuum dem Produkt entzogen wird. Eine Variante sieht vor, dass der Produktförderer mittels eines baulich in ihm integrierten Heizmittels, beispielsweise einer integrierten Heizmatte, erwärmt wird. Diese kann insbesondere induktiv auf das vorbestimmte Temperaturniveau erwärmt werden.
- Eine Variante sieht vor, dass die Vakuumkühlkammer(n) begrenzende Kammerwände auf ein vorbestimmtes Temperaturniveau beheizt werden. Damit ist es möglich, Niederschlag von Wasserdampf an den Kammerwänden zu reduzieren, welcher dem Produkt beim Vakuumkühlen entzogen wird. Ein aktives Beheizen der Kammerwände könnte beispielsweise anhand eines darin zirkulierenden Fluides geschehen.
- Insbesondere durchläuft der Produktförderer eine entlang der Kühlstraße angeordnete Reinigungseinheit und/oder Trocknungseinheit. Damit lässt sich der Produktförderer für höchste hygienische Anforderungen betreiben.
- Vorstellbar ist es, dass entlang der Kühlstraße mehrere Vakuumkühlstationen synchron zueinander arbeiten. Dies kann gemäß einer kostengünstigen Variante anhand eines von den Vakuumkühlstationen gemeinsam genutzten Hubwerks geschehen. Dieses Hubwerk kann insbesondere einen Servomotor aufweisen.
- Zweckmäßigerweise werden die Arbeitsweise der Vakuumkühlstation(en) sowie eine intermittierende Vorschubbewegung des Produktförderers dynamisch im Hinblick auf eine bereitgestellte, erfasste Menge von zu kühlenden Produkten aufeinander abgestimmt, um eine Ausbringung vakuumgekühlter Produkte entsprechend einer Bereitstellung heißer Produkte zu regeln.
- Die intermittierende Arbeitsweise zum Vakuumkühlen heißer Produkte entlang der Kühlstraße kann insbesondere in Abhängigkeit eines Maschinenarbeitstakts einer der Kühlstraße in Produktionsrichtung vorgeordneten Backeinrichtung und/oder einer der Kühlstraße in Produktionsrichtung nachgeordneten Verpackungsmaschine geregelt werden.
- Die Produkte, insbesondere Backwaren, haben bevorzugt nach dem Vakuumkühlen eine Kerntemperatur von unter 35°C aufzuweisen, insbesondere 18°C bis 25°C. Vorzugsweise weist das Produkt bzw. die Backware bei Beginn des Vakuumkühlens in der Vakuumkühlkammer eine Kerntemperatur von mindestens 70°C auf, vorzugsweise mindestens 78°C, weiter vorzugsweise mindestens 85°C.
- Die Produkte können insbesondere während des Vakuumkühlens um mind. 5 °C, vorzugsweise mind. 10°C, vorzugsweise mind. 15°C, vorzugsweise mind. 20°C, vorzugsweise mind. 25°C, vorzugsweise mind. 30°C, vorzugsweise mind. 35°C abgekühlt werden.
- Ferner bezieht sich die Erfindung auf eine Kühlstraße, die mindestens einen Produktförderer zum Transportieren von Produkten entlang einer Transportrichtung aufweist. Erfindungsgemäß weist die Kühlstraße zumindest entlang eines Abschnitts des Produktförderers eine Vakuumkühlstation auf, die zum Vakuumkühlen der in sie auf dem Produktförderer hineintransportierten Produkte mittels eines erzeugten Vakuums ausgebildet ist. Die Kühlstraße ist damit mit einer Vakuumkühlstation ausgestattet, welche die auf dem Produktförderer transportierten Produkte aktiv entlang der Kühlstraße vakuumkühlt. Damit lässt sich die Kühlstraße bauraumreduziert verwirklichen, sodass sie für sich alleine beziehungsweise als Kühlstraße in einer Produktionslinie integriert weniger Platz in Anspruch nimmt.
- Denkbar wäre es, dass der Produktförderer samt der ihm zugeordneten Vakuumkühlstation integraler Bestandteil einer Kammerbandvakuumkühlmaschine sind. Diese kann als eigenständige Maschine unabhängig von einem Verpackungsprozess, sozusagen als Stand-Alone-Lösung, zum Zwecke der aktiven Kühlung von Produkten eingesetzt werden. Eine Variante sieht vor, dass die Kühlstraße mehrere hintereinander positionierte Kammerbandvakuumkühlmaschinen aufweisen.
- Vorzugsweise lässt sich an der Vakuumkühlstation zum Vakuumkühlen der in sie auf dem Produktförderer hineintransportierten Produkte mindestens eine Vakuumkühlkammer bilden. Diese kann hermetisch dicht ausgebildet sein.
- Gemäß einer Variante der Erfindung ist vorgesehen, dass die Vakuumkühlstation zum Ausbilden mehrerer in Transportrichtung hintereinander positionierten und/oder mehrerer quer zur Transportrichtung nebeneinander positionierten Vakuumkühlkammern konfiguriert ist. Die Produkte können diese Vakuumkühlkammern derart entlang der Kühlstraße durchlaufen, dass sie in mehreren Schritten abgekühlt werden. Dieser Aufbau eignet sich für einen in kurzen Kühlprozessintervallen durchführbaren, intermittierenden Transport der Produkte, sodass vakuumgekühlte Produkte ohne große Verzögerung entlang der Kühlstraße transportiert werden können.
- Vorzugsweise weist die Vakuumkühlstation mindestens ein relativ zum Produktförderer höhenverstellbar gelagertes Werkzeugoberteil und/oder mindestens ein relativ zum Produktförderer höhenverstellbar gelagertes Werkzeugunterteil auf. Der Abschnitt des Produktförderers, auf welchem die Produkte vakuumgekühlt werden, kann dabei vollständig innerhalb einer durch das Werkzeugoberteil und das Werkzeugunterteil gebildeten Vakuumkühlkammer eingeschlossen werden, wenn sich die Vakuumkühlstation in einer zum Vakuumkühlen geschlossenen Stellung befindet.
- Vorzugsweise ist das Werkzeugoberteil und/oder das Werkzeugunterteil zum Erzeugen des Vakuums ausgebildet. Insbesondere lassen sich das Werkzeugunterteil und das Werkzeugoberteil derart zum Bilden einer Vakuumkühlkammer zusammenführen, dass das Vakuum sowohl über das Werkzeugunterteil als auch über das Werkzeugoberteil gebildet wird.
- Eine Variante sieht vor, dass der Produktförderer ein Förderband oder ein Gliederbandförderer ist. Damit lassen sich unterschiedliche Produkte transportieren.
- Zweckmäßigerweise ist der Produktförderer auf ein vorbestimmtes Temperaturniveau beheizbar ausgebildet. Damit kann der Niederschlag von Wasserdampf, welcher beim Vakuumkühlen den Produkten entzogen wird, reduziert werden. Vorzugsweise umfasst der Produktförderer ein Heizmittel, beispielsweise eine integrierte Heizmatte. Diese kann in Form eines im Förderband eingebetteten Drahtgeflechts vorliegen.
- Insbesondere sind die Vakuumkühlkammer begrenzende Kammerwände auf ein vorbestimmtes Temperaturniveau beheizbar ausgebildet. Damit wird einem Niederschlag von Wasserdampf, welcher beim Vakuumkühlen den zu kühlenden Produkten entzogen wird, entgegengewirkt. Dies begünstigt einen hygienischen Betrieb der Kühlstraße.
- Eine Variante sieht vor, dass die Kühlstraße zumindest für eine zum Transportieren der Produkte eingesetzte Oberfläche des Produktförderers wenigstens eine Reinigungseinheit und/oder Trocknungseinheit aufweist. Der Produktförderer kann damit von darauf beim Vakuumkühlen gebildeten Niederschlag von Wasserdampf befreit werden. Die Reinigungseinheit und/oder die Trocknungseinheit können unmittelbar hinter der Vakuumkühlkammer positioniert sein, damit die eingangs des Produktförderers aufgenommenen Produkte auf einer gereinigten Oberfläche abgelegt werden können, bevor sie in die Vakuumkühlkammer hineintransportiert werden.
- Vorzugsweise weist die Kühlstraße mindestens einen, insbesondere als Pufferband konfigurierten, weiteren Produktförderer stromaufwärts der Vakuumkühlstation auf. Damit kann ein vorderhalb der Vakuumkühlstation variierender Zufluss von zu kühlenden Produkten gepuffert werden.
- Eine Variante sieht vor, dass die Kühlstraße mindestens ein zum kontinuierlichen Transport ausgebildetes Zuführband stromaufwärts der Vakuumkühlstation, insbesondere in Transportrichtung vorderhalb des Pufferbands, aufweist. Deren Betrieb kann so eingestellt sein, dass darauf transportierte Produkte unter Berücksichtigung eines vorbestimmten Kühlintervalls an der Vakuumkühlstation zuverlässig zugeführt werden.
- Eine besonders vorteilhafte Variante sieht vor, dass die Kühlstraße ein eingangs positioniertes Zuführband, ein als Puffer eingesetztes Transportband, zwei jeweils als Transportband ausgebildete Produktförderer mit ihnen zugeordneten Vakuumkühlstationen sowie ein als Abführband konfiguriertes Transportband umfasst, die in dieser Reihenfolge in Transportrichtung hintereinander angeordnet sind. Die Anzahl der Produktförderer mit Vakuumkühlstation ist beliebig, kann insbesondere weiter ausgebaut werden.
- Denkbar wäre es, eine Verpackungslinie zu bilden, die mindestens eine Kühlstraße sowie mindestens eine zum Verpacken der entlang der Kühlstraße vakuumgekühlten Produkte konfigurierte Verpackungsmaschine, insbesondere in Form einer Tiefziehverpackungsmaschine, umfasst. Damit lassen sich zunächst entlang der Kühlstraße Produkte vakuumkühlen und anschließend können diese der Verpackungsmaschine zuführt und entlang dieser mit einem daran verarbeiteten Packungsmaterial verpackt werden.
- Insbesondere kann ein am Ausgang der Kühlstraße angeordnetes Abführband als eine Zuführung für die Verpackungsmaschine, die insbesondere in Form einer Tiefziehverpackungsmaschine vorliegt, ausgebildet sein. Das Abführband kann dabei zumindest abschnittsweise oberhalb einer zum Transportieren von hergestellten Verpackungsmulden ausgebildeten Transporteinrichtung mit seitlichen Transportketten angeordnet sein, um in die darunter mittels der Transportketten transportierten Verpackungsmulden die vakuumkühlten Produkte abzuwerfen.
- Insbesondere kann das Abführband der Kühlstraße zum Ausgleich von Höhenunterschieden zwischen der Kühlstraße und der Verpackungsmaschine konfiguriert sein. Beispielsweise ist es zumindest abschnittsweise höhenverstellbar ausgebildet.
- Insbesondere weist die Verpackungslinie mindestens eine zum Backen konfigurierte Backvorrichtung auf, wobei die mittels der Backvorrichtung gebackenen Produkte der Kühlstraße übergebbar sind, insbesondere an ein daran vorgesehenes Zuführband. Entlang dieser Verpackungslinie können die Produkte sowohl hergestellt, vakuumgekühlt und maschinell mit einem Verpackungsmaterial verpackt werden.
- Ausführungsbeispiele der Erfindung werden anhand der folgenden Figuren genauer erläutert. Es zeigen:

Figur 1 zeigt eine Kühlstraße 1. Entlang einer Transportrichung T werden Produkte P entlang der Kühlstraße 1 transportiert, um vakuumgekühlt zu werden. Dafür umfasst die inFigur 1 gezeigte Kühlstraße 1 eine Vakuumkühlstation 2a sowie eine in Transportrichtung T dahinter positionierte, weitere Vakuumkühlstation 2b. Diese Vakuumkühlstationen 2a, 2b sind jeweils dazu konfiguriert, einen Vakuumkühlprozess durchzuführen, wodurch den darin aufgenommenen Produkten P mittels eines erzeugten Vakuums V Wasserdampf entzogen wird, um diese in aufeinanderfolgenden Schritten abzukühlen. - Die Vakuumkühlstationen 2a, 2b verfügen jeweils über einen Produktförderer 3a, 3b. Die beiden Produktförderer 3a, 3b der Vakuumkühlstationen 2a, 2b sind in
Figur 1 als Transportbänder 4a, 4b ausgebildet. Ferner zeigtFigur 1 , dass an den jeweiligen Vakuumkühlstationen 2a, 2b hermetisch dichte Vakuumkühlkammern 5a, 5b gebildet sind. GemäßFigur 1 sind an den jeweilligen Vakuumkühlstationen 2a, 2b jeweils zwei Produkte P auf den jeweiligen Transportbändern 4a, 4b in die Vakuumkühlkammern 5a, 5b hineintransportiert, um darin mittels des erzeugten Vakuums V gekühlt zu werden. - Gemäß
Figur 1 werden die Produkte P, indem sie die beiden Vakuumkühlstationen 2a, 2b schrittweise durchlaufen, von einem ersten Temparaturniveau T1, welches die Produkte P im Einlauf der Kühlstraße 1 aufweisen, auf ein niedrigeres, gewünschtes Temperaturniveau T2 heruntergekühlt, welches die Produkte P am Auslauf der Kühlstraße 1 aufweisen. - An den jeweiligen Vakuumkühlstationen 2a,2b aus
Figur 1 sind höhenverstellbar gelagerte Werkzeugoberteile 6a, 6b als Kammerdeckel vorgesehen. Durch Öffnen und Schließen können die jeweiligen Werkzeugoberteile 6a, 6b zusammen mit den jeweiligen dazugehörigen Transportbändern 4a, 4b, ggf. zusätzlich mit nicht gezeigten Werkzeugunterteilen, die jeweiligen Vakuumkühlkammern 5a, 5b ausbilden, um dazwischen die zu kühlenden Produkte P hermetisch dicht einzuschließen. -
Figur 1 zeigt ferner in schematischer Darstellung, dass die jeweiligen Vakuumkühlstationen 2a, 2b jeweils eine Heizquelle 7a, 7b aufweisen, anhand welcher sich die jeweiligen Transportbänder 4a, 4b auf ein vorbestimmtes Temperaturniveau aufwärmen lassen. Dadurch ist es möglich, Niederschlag des durch das Vakuumkühlen den Produkten P entzogenen Wasserdampfes auf den Transportbändern 4a, 4b zu reduzieren. Denkbar wäre es zum Zwecke einer Niederschlagreduzierung, dass die jeweiligen Vakuumkühlkammern 5a, 5b auf ein vorbestimmtes Temperaturniveau beheizbare Kammerwände 8a, 8b aufweisen, die insbesondere anhand der jeweiligen Heizquellen 7a, 7b beheizbar sind. - Weiter zeigt
Figur 1 in schematischer Darstellung, dass ausgangs der jeweiligen Vakuumkühlstationen 2a, 2b eine Reinigungseinheit 9a, 9b und eine Trocknungseinheit 10a, 10b angeordnet sind. Diese Einheiten können jeweils dafür benutzt werden, um die Transportbänder 4a, 4b der beiden Vakuumkühlstationen 2a, 2b zu reinigen, zumindest bereichsweise eine Oberfläche O, auf welcher die Produkte P abgelegt sind. - Gemäß
Figur 1 verfügt die Kühlstraße 1 über einen als Pufferförderer konfigurierten Produktförderer 11, der in Transportrichung T vorderhalb der Vakuumkühlstation 2a positioniert ist. Dieser ist insbesondere dazu konfiguriert, gemäß einem gewünschten Arbeitstakt intermittierend der stromabwärts gelagerten Vakuumkühlstation 2a Produkte P zuzuführen. - Gemäß
Figur 1 verfügt die Kühlstraße 1 ein eingangs positioniertes Zuführband 12, das dazu ausgebildet ist, kontinuerlich Produkte P zu transportieren, insbesondere diese von einer schematisch dargestellten Backvorrichtung 13 kontinuierlich aufnimmt. Vom Zuführband 12 werden die heißen Produkte P kontinuierlich auf den als Pufferförderer konfigurierten Produktförderer 11 übergeben, welcher intermittierend die heißen Produkte P an die Vakuumkühlstationen 2a, 2b weitergibt. - In Transportrichtung T ist stromabwärts der Vakuumkühlstationen 2b ein Abführband 13 angeordnet, um gekühlte Produkte P zu transportieren. Das in
Figur 1 gezeigte Abführband 13 kann als Zuführeinrichtung für eine nachgelagerte Verpackungsmaschine 14 dienen, um die gekühlten Produkte P an die Verpackungsmaschine 14 zu übergeben, damit sie entlang dieser verpackt werden können. -
Figur 2 zeigt eine der inFigur 1 eingesetzten Vakuumkühlstationen 2a, 2b in isolierter, perspektivischer Darstellung. - In
Figur 2 wird die Vakuumkühlstation 2a, 2b in einer geöffneten Stellung gezeigt. GemäßFigur 2 sind vier Produkte P mittels des Transportbands 4a, 4b unterhalb des Werkzeugoberteils 6a, 6b positioniert. Zum Durchführen des Vakuumkühlprozesses wird das Werkzeugoberteil 6a, 6b abgesenkt, um die darunter positionierten Produkte P in einer dadurch gebildeten Vakuumkühlkammer 5a, 5b hermetisch dicht einzuschließen. - Gemäß
Figur 2 weist die Vakuumkühlstation 2a, 2b eine Steuerung 15 auf. Anhand der Steuerung 15 lassen sich die in der Vakuumkühlstation 2a, 2b durchgeführten Vakuumkühlprozesse sowie Belüftungsprozess steuern und nachverfolgen. Insbesondere lässt sich der innerhalb der Vakuumkühlstation 2a, 2b durchgeführte Vakuumkühlprozess anhand der Steuerung 15 dynamisch regeln, insbesondere unter Berücksichtigung des Temperaturniveaus T1 der Produkte P, welches anhand einer eingangs der Vakuumkühlstation 2a, 2b positionierten Temperaturerfassungseinheit 16 erfasst werden kann. Alternativ zur inFigur 2 gezeigten Positionierung der Temperaturerfassungseinheit 16 könnte diese auch innerhalb der Vakuumkühlkammer 5a, 5b, beispielsweise direkt am Werkzeugoberteil 6a, 6b angeordnet sein. Die dynamische Regelung des Vakuumkühlprozesses könnte alternativ und/oder ergänzend zur Temperaturerfassung auch durch eine dynamische Druckregelung auf Basis eines Vergleichs eines innerhalb der Vakuumkühlkammer erfassten Ist-Druckgradienten mit einem Soll-Vakuum-Druckgradienten durchgeführt werden. - Die in
Figur 2 gezeigte Maschine bildet einen Vakuumkühler aus, der sich unabhängig von einem Maschinenaufbau einer Verpackungsmaschine, d.h. ohne daran baulich integriert zu sein, als eigenständige Maschine bedienen lässt, kann insbesondere als Stand-Alone-Lösung zum Vakuumkühlen der ihn durchlaufenden Produkte P eingesetzt werden. -
Figur 3 zeigt eine Verpackungsmaschine 14, die in Form einer Tiefziehverpackungsmaschine 16 konfiguriert ist. Die Tiefziehverpackungsmaschine 16 verfügt über eine Formstation 17 zum Herstellen von Tiefziehmulden M in einer Unterfolie 18. In Produktionsrichtung R stromabwärts der Formstation 17 ist eine Einlegestrecke 19 vorgesehen. Weiter stromabwärts in Produktionsrichtung R der Tiefziehverpackungsmaschine 16 ist eine Siegelstation 20 angeordnet, um mit Produkt beladene Mulden M mit einem Oberfolienmaterial zu versiegeln. Der Siegelstation 20 folgt in Produktionsrichtung R eine Querschneidestation 21 sowie eine Längsschneidestation 22, um aus dem versiegelten Folienmaterial einzelne Verpackungen herzustellen. - Die in
Figur 1 gezeigte Kühlstraße 1 kann gemeinsam mit der inFigur 3 gezeigten Tiefziehverpackungsmaschine 16 eine Produktionslinie bilden. Die entlang der Kühlstraße 1 vakuumgekühlten Produkte P können anhand des ausgangs der Kühlstraße 1 positionierten Abführbands 13 im Bereich der an der Tiefziehverpackungsmaschine 16 ausgebildeten Einlegestrecke 16 in die dort bereitgestellten Mulden M eingelegt werden. Das Abführband 13 kommt dabei als Produkt-Zuführeinrichtung für die Tiefziehverpackungsmaschine 16 zum Einsatz. -
Figur 4 zeigt eine Verpackungsmaschine 14, die in Form einer Schalenverschließmaschine 23 konfiguriert ist. Die Schalenverschließmaschine 23 weist ein Zuführband 24 auf, auf welchem separate Schalenteile, sogenannte Trays 25, angeordnet sind. In Produktionsrichtung R stromabwärts des Zuführbands 24 ist eine Siegelstation 26 ausgebildet. Die Siegelstation 26 verfügt über eine Greifereinrichtung 27, die dazu ausgebildet ist, die auf dem Zuführband 24 bereitgestellten Schalenteile 25 abzuholen und an ein Werkzeugunterteil 28 der Siegelstation 26 zu übergeben. Das Werkzeugunterteil 28 der Siegelstation 26 ist dazu ausgebildet, gemeinsam mit einem darüber positionierten Werkzeugoberteil 29 zusammengeführt zu werden, um die im Werkzeugunterteil 26 aufgenommenen Schalenteile 25 mit einer durch die Siegelstation 26 hindurch geführten Oberfolie 30 zu versiegeln. Die mittels der Oberfolie 30 versiegelten Schalenteile 25 können von der Greifereinrichtung 27 aufgenommen und an ein Abführband 31 übergeben werden. Zeitgleich kann die Greifereinrichtung 27 vom Zuführband 24 erneut unversiegelte Schalenteile 25 abholen und in das Werkzeugunterteil 28 ablegen. - Die in
Figur 1 gezeigte Kühlstraße 1 kann dafür genutzt werden, um der inFigur 4 gezeigten Schalenverschließmaschine 23 gekühlte Produkte P zuzuführen. Beispielsweise kann das in Figur 1 gezeigte Abführband 13 der Kühlstraße 1 dazu konfiguriert sein, die darauf transportieren, gekühlten Produkte P in die auf dem Zuführband 24 der Schalenverschließmaschine 23 positionierten Schalenteile 25 abzulegen, sprich diese zu befüllen, bevor sie mittels der Greifereinrichtung 27 in die Siegelstation 26 transportiert werden.
Claims (13)
- Verfahren zum Kühlen von entlang einer Kühlstraße (1) mittels eines daran in Form eines Transportbands (4a, 4b) vorgesehenen Produktförderers (3a, 3b) in Transportrichtung (T) transportierten Produkten (P), wobei zumindest eine entlang eines Abschnitts des Produktförderers (3a, 3b) vorgesehene Vakuumkühlstation (2a, 2b) die in sie auf dem Produktförderer (3a, 3b) hineintransportierten Produkte (P) mittels eines innerhalb der Vakuumkühlstation (2a, 2b) erzeugten Vakuums (V) kühlt, dadurch gekennzeichnet, dass in Transportrichtung (T) mehrere hintereinander angeordnete Vakuumkühlkammern (5a, 5b) zum intermittierenden Vakuumkühlen von auf dem Produktförderer (3a, 3b) durch sie hindurchgeführten Produkten (P) gebildet werden.
- Verfahren nach Anspruch 1, dadurch gekennzeichnet, dass an der Vakuumkühlstation (2a, 2b) zum Vakuumkühlen der in sie auf dem Produktförderer (3a, 3b) hineintransportierten Produkte (P) mindestens eine Vakuumkühlkammer (5a, 5b) gebildet wird.
- Verfahren nach einem der vorangehenden Ansprüche, dadurch gekennzeichnet, dass der Produktförderer (3a, 3b) auf ein vorbestimmtes Temperaturniveau beheizt wird und/oder die Vakuumkühlkammer (5a, 5b) begrenzende Kammerwände (8a, 8b) auf ein vorbestimmtes Temperaturniveau beheizt werden und/oder der Produktförderer (3a, 3b) eine entlang der Kühlstraße (1) angeordnete Reinigungseinheit (9a, 9b) und/oder Trocknungseinheit (10a, 10b) durchläuft.
- Kühlstraße (1), die mindestens einen Produktförderer (3a, 3b), der ein Transportband (4a, 4b) ist, zum Transportieren von Produkten (P) entlang einer Transportrichtung (T) aufweist, wobei die Kühlstraße (1) zumindest entlang eines Abschnitts des Produktförderers (3a, 3b) eine Vakuumkühlstation (2a, 2b) aufweist, die zum Vakuumkühlen der in sie auf dem Produktförderer (3a, 3b) hineintransportierten Produkte (P) mittels eines erzeugten Vakuums ausgebildet ist, dadurch gekennzeichnet, dass die Vakuumkühlstation (2a, 2b) zum Ausbilden mehrerer in Transportrichtung (T) hintereinander positionierten Vakuumkühlkammern (5a, 5b) konfiguriert ist, die zum intermittierenden Vakuumkühlen von auf dem Produktförderer (3a, 3b) durch sie hindurchgeführten Produkten (P) vorgesehen sind.
- Kühlstraße nach Anspruch 4, dadurch gekennzeichnet, dass sich an der Vakuumkühlstation (2a, 2b) zum Vakuumkühlen der in sie auf dem Produktförderer (3a, 3b) hineintransportierten Produkte (P) mindestens eine Vakuumkühlkammer (5a, 5b) bilden lässt.
- Kühlstraße nach Anspruch 4 oder 5, dadurch gekennzeichnet, dass die Vakuumkühlstation (2a, 2b) zum Ausbilden mehrerer quer zur Transportrichtung (T) nebeneinander positionierten Vakuumkühlkammern (5a, 5b) konfiguriert ist.
- Kühlstraße nach einem der Ansprüche 4 bis 6, dadurch gekennzeichnet, dass die Vakuumkühlstation (2a, 2b) mindestens ein relativ zum Produktförderer (3a, 3b) höhenverstellbar gelagertes Werkzeugoberteil (6a, 6b) und/oder mindestens ein relativ zum Produktförderer (3a, 3b) höhenverstellbar gelagertes Werkzeugunterteil aufweist.
- Kühlstraße nach Anspruch 7, dadurch gekennzeichnet, dass das Werkzeugoberteil (6a, 6b) und/oder das Werkzeugunterteil zum Erzeugen des Vakuums (V) ausgebildet ist.
- Kühlstraße nach einem der Ansprüche 4 bis 8, dadurch gekennzeichnet, dass der Produktförderer (3a, 3b) auf ein vorbestimmtes Temperaturniveau beheizt ist und/oder die Vakuumkühlkammer (5a, 5b) begrenzende Kammerwände (8a, 8b) auf ein vorbestimmtes Temperaturniveau beheizbar sind.
- Kühlstraße nach einem der Ansprüche 4 bis 9, dadurch gekennzeichnet, dass die Kühlstraße (1) zumindest für eine zum Transportieren der Produkte (P) eingesetzte Oberfläche (O) des Produktförderers (3a, 3b) wenigstens eine Reinigungseinheit (9a, 9b) und/oder Trocknungseinheit (10a, 10b) aufweist.
- Kühlstraße nach einem der Ansprüche 4 bis 10, dadurch gekennzeichnet, dass die Kühlstraße (1) mindestens einen als Pufferförderer konfigurierten, weiteren Produktförderer (11), insbesondere ein Transportband, stromaufwärts der Vakuumkühlstation (2a, 2b) aufweist und/oder dass die Kühlstraße (1) mindestens ein zum kontinuierlichen Transport ausgebildetes Zuführband (12) stromaufwärts der Vakuumkühlstation (2a, 2b) aufweist.
- Verpackungslinie, umfassend mindestens eine Kühlstraße (1) gemäß einem der Ansprüche 4 bis 11 sowie mindestens eine zum Verpacken der entlang der Kühlstraße (1) vakuumgekühlten Produkte (P) konfigurierte Verpackungsmaschine (14), insbesondere in Form einer Tiefziehverpackungsmaschine (14').
- Verpackungslinie nach Anspruch 12, dadurch gekennzeichnet, dass die Verpackungslinie mindestens eine zum Backen konfigurierte Backvorrichtung (13) aufweist, wobei die mittels der Backvorrichtung (13) gebackenen Produkte (P) der Kühlstraße (1) übergebbar sind.
