- the calcium should be added after casting (because the slurry is too viscous to cast).
- the total amount of the setting agent such as a calcium source, may be 0.5-5 wt% (calculated on a dry weight basis). It has been found that the addition of too little setting agent may result in a gel which does not stabilise any optional flavour and results in the flavour not being entrapped in the gel matrix. It has also been found that the addition of too much setting agent results in a gel that is very tacky or very brittle and consequently has poor handleability.
