Abstract

L'invention concerne un couteau annulaire (1) ayant un capteur (5) pour déterminer la profondeur de coupe et un procédé pour déterminer la profondeur de coupe. Lors du parage de la viande, tel que dans des abattoirs, un client peut nécessiter une couche de graisse d'une épaisseur donnée, cependant la couche de graisse naturelle des animaux varie entre différentes carcasses et dans la carcasse/la pièce de viande individuelle. Par la détermination de l'épaisseur de couche de graisse et de la variation qui s'ensuit d'un morceau de viande avant le parage du morceau de viande, un opérateur peut se voir présenter de telles informations et peut retirer la graisse dans différentes zones pour obtenir l'épaisseur requise. Le parage peut être effectué avec un système calculant en temps réel la quantité de graisse devant être retirée quand de la graisse a déjà été retirée par un opérateur.
