Description

    Technical field
  • This invention relates to susceptors for reheating a dough-based cup-shaped snack. This kind of product is often commercialized in a frozen state and is intended to be heated by microwave in a microwave oven. Said dough-based vase-shaped snacks generally comprise a cone or cylinder-shaped outer layer made of dough having a closed lower portion and a rim upper portion around an open top, and a savoury or sweet filling located within said outer layer and having a top surface exposed at said open top of the outer layer.
  • The cone shaped snacks are packed in cone shaped susceptors i.e. an envelop material used for its ability to absorb electromagnetic energy and convert it to heat. The invention centres specifically on the pattern and geometry of said susceptors and the material used for the substrate to execute the susceptors in order to cause the increase and redistribution of the coupled microwave energy into the filling and cause it to heat faster and more uniformly
  • Background art
  • Dough-based vase-shaped snacks appear disclosed in the following patent documents: US 4313964 , US 4463021 , EP1844657 , US 2006216387 , WO2007138620 and US 2009/0095853 .
  • The microwave re-heating of the dough-based cone- or cylinder-shaped products containing savoury or sweet fillings presents particular challenges. These include the uneven heating of the product, the rapid overheating, drying and occasional burning of parts of the dough-based cone and in particular the excessive heating of the filling around the top rim while the core parts of the filling remain cooler and even frozen and require extended heating times to bring them to the desired end temperatures. In addition the variability in the quality of re-heating of microwaveable meal solutions is often a key obstacle in the way of the wider take up and commercial success of these types of products.

  • The invention detailed in this document contributes to improving the quality of the re-heating and simultaneously provides for safe handling of the product immediately after heating.
  • Disclosure of the invention
  • The problems addressed by the invention centre around upgrading in quality of re-heating of the cones in microwave ovens and serving of the cone shaped snacks and more specifically they cover:
    • Improvements in the heating of the top of the filling (i.e. reduction of the excessive heating around the periphery of the top of the filling).
    • Reduction of heat losses from the susceptors and more effective transfer of the heat energy generated within the susceptor to the adjoining outer surface of the dough cone.
    • Having a cool-to-touch susceptor outer surface immediately or soon after the end of the re-heating so to make it safe for the consumers to hold and consume the cone-shaped product without a standing time delay.
  • The improved heating of the filling is achieved through design aspects of the pattern/geometry used for the cone-shaped susceptors, positively interacting with the microwave heating in the explained context.
  • The objectives of this invention are achieved with regard to heating the top part of a fitted dough-based vase-shaped snack more specifically by the combination of the following features:
    • the extension of the susceptor above the level of the cone or cup it holds; and
    • the introduction of an undulated pattern on the upper edge of the susceptor, beyond the boundaries of the filler.
  • The undulations on the top of the susceptor are designed to act as a quasi mode stirrer because of the changes in the characteristic impedance of the space swept by the upper section of the susceptor (with the product inside it) when rotating inside a ... microwave oven. The dimensions of the undulations and their position relative to the top of the cone are selected so as to effect maximum perturbations of the electric field around the top surface of the cone while providing a degree of shielding of the top edge of the cone.
  • The invention further proposes the use of a thermally insulating substrate for the construction of the susceptor, more specifically the use of corrugated board as a substrate for the functional part of the susceptor namely the metallised polymer film.
  • Brief description of the drawings
  • The above and other features and advantages will be more fully understood from the following detailed description of exemplary embodiments with reference to the accompanying drawings, in which:
    • Fig. 1 is a perspective view of a susceptor for packing a dough-based cone snack heatable by microwave according to an embodiment of the present invention;
    • Fig. 2 is a flat development of the parts that provide side walls in an embodiment of the proposed susceptor.
    • Fig. 3 is a detail of the undulations at the upper edge of the susceptor.
    Detailed description of exemplary embodiment
  • Fig. 1 illustrates a susceptor for a dough-based vase-shaped snack heatable by microwave according to this invention, intended to act as a package of said snack and including one or several walls 10, surrounding the vase-shaped outer layer of said snack.
  • According to this invention said wall or walls 10 of the susceptor extends above the level of the rim upper portion of the snack's vase-shaped outer layer and the upper edge of the susceptor has an undulated pattern 11, wherein undulations cover the whole of the perimeter of the top edge of the susceptor's wall 10 while in the depictured embodiment a notch 12 appears intended for handling purposes.
  • As clearly seen in the figures the undulations provide a regular wave pattern such for example a sinusoidal one.
  • In order to obtain the effects of this invention the undulations 11 (see Fig. 3) should have an amplitude A of 0.1 mm < A< 36.0 mm and repeat dimensions, with a periodicity P of 0.1 mm < P < 288 mm.
  • Undulations having amplitude of around 12 mm work best and they are easy to implement.
  • In a second aspect of this invention the wall or the walls 10 of the susceptor including at its inner part a polymerised film comprises an insulating corrugated board 13 as a substrate on which said metallised polymer film 14 (smooth inner surface, as indicated ion Fig. 1) is extended. The air gap between the inner microwave active surface and the outer inert surface of the susceptor structure acts as a thermal insulator during heating. This reduces the heat losses from the susceptor structure during the heating cycle thus resulting in more of the heat energy generated by the functional element of the susceptor to flow into dough cone. When the microwave heating cycle is finished, the outer surface air of the susceptor structure cools down rapidly (high heat transfer rates to the surrounding and much reduced heat flow rates from the hot inner surface to the outer surface).
  • Figs. 1 and 2 further disclose precut lines 15 that facilitate the separation of the top of the susceptor to have access to the edible product in the dough-based cup-shaped snack. An indentation 16 in one of the side panels of the susceptor allows for a separation of upper part of the said top part of the susceptor.

Claims (7)

  1. A susceptor for a dough-based vase-shaped snack heatable by microwave, said snack comprising:
    a vase-shaped outer layer made of dough having a closed lower portion and a rim upper portion around an open top,
    a savoury or sweet filling located within said outer layer and having a top surface exposed at said open top of the outer layer
    and said susceptor acting as a package of said snack during heating is made by a metallised polymer film capable of absorbing electromagnetic energy and converting it to heat and the susceptor including at least one peripheral wall (10) that surrounds the vase-shaped outer layer, wherein said at least one peripheral wall (10) of the susceptor extends above the level of the rim upper portion of said dough outer layer and the upper edge of the susceptor having an undulated pattern.
  2. A susceptor, according to claim 1, wherein the undulations (11) of said undulated pattern cover the whole of the perimeter of the top edge of the susceptor.
  3. A susceptor according to claim 1, wherein the undulations (11) cover the whole of the perimeter of the top edge of the susceptor with exception of a notch (12).
  4. A susceptor according to claim 1, wherein the undulations (11) provide a regular wave pattern.
  5. A susceptor according to claim 4 wherein said undulations (11) have an amplitude A, of 0.1 mm < A< 36.0 mm and repeat dimensions, with a periodicity P, of 0.1 mm < P < 288mm.
  6. A susceptor according to claim 5, wherein said undulations (11) having an amplitude of around 12 mm.
  7. A susceptor according to claim 1 wherein said at least one wall (10) of the susceptor includes at its inner part (14) a metallized polymer film and comprises an insulating corrugated board (13) as a substrate on which said metallised polymer film is laminated.
