Abstract

L'invention concerne un procédé continu pour la surgélation individuelle de produits (P) tels que notamment des légumes, dans lequel :
- on forme une couche de produits, en mouvement continu,
- on soumet la couche de produits à une étape de surgélation de type à lit fluidisé au cours de laquelle la couche de produits est mise en suspension dynamique sous la portance d'un flux d'air frigoporteur (23) de vitesse V1, afin d'obtenir une congélation des produits à leur périphérie, puis,
- on soumet la couche de produits à une étape de surgélation du type à lit fixe au cours de laquelle la couche de produits est plaquée contre un support sous l'effort d'un flux d'air frigoporteur de vitesse V2, supérieure à V1, afin d'obtenir la congélation totale à coeur des produits.
