Abstract

A tubular casing for foodstuffs, in particular a sausage casing, is described which has an improved ability to peel off. The sausage casing based on cellulose has, on its internal surface, a coating which contains alginates, alginic acid, chitosans or a combination of these active substances.

Description

The invention relates to a tubular food casing based on cellulose with a coating present on its inner surface to improve the peelability of the casing from the contents and to the use of the food casing. In particular, the invention relates to peeler casings which are used for sausage meat and scalded sausage types and which provide very good peelability on automatic peeling machines which operate at high speed. In addition, it was found that the internal preparation for the above. Food casings are also suitable for narrow casings and wreath casings, which are used, for example, for smoked meat sausages and coarse meat sausages.

Cases of the generic type are already known from EP-A-109 611 and have on their inside a coating of a mixture of a water-soluble cellulose ether, a wax and an oil. A casing of the same type known from DE-A-34 47 026 also contains cellulose ether and wax in addition to a chromium-fatty acid complex compound and a dialkylpolysiloxane in an internally applied coating. All known formulations for improving the peelability have relatively complicated compositions, and they leave something to be desired in terms of their effectiveness, particularly in the case of problematic filling goods.

In addition to the non-edible food casings based on cellulose, edible casings based on polysaccharides such as alginic acid or alginate, chitosan, pectin, starch, furcellaran, carrageenan and agar are also known (EP-A 0 400 484). These shells dissolve in hot water. The edible casing can be made heat-sealable by a layer of water-soluble protein applied on one or both sides.

A 14 92 711).However, edible sausage casings are usually made on a collagen basis. When cooking the sausage, the casing should shrink to the same extent as the content. In order to produce such a shrinkable casing, sodium minginate, which had been comminuted and ground into a paste, was mixed in, the mixture was then extruded and cured in an aqueous metal salt solution (DE-A 14 92 711).

It was an object of the present invention to provide a food casing with an inner preparation (inner coating) in which the coating composition is made up of as few individual components as possible and which nevertheless has a broad spectrum of activity in terms of its peelability from different filling goods.

This object is achieved by a food casing of the type mentioned at the outset, the distinguishing feature of which is that the coating contains alginates, alginic acid, chitosans or a combination of these.

The food casing according to the invention is preferably an artificial sausage casing, in particular a water-free sausage casing, which is suitable for scalding, smoking and automatically peeling small scalded sausages. The special coating on the inside shows reduced adhesion between the inner wall of the casing and the filling material, which is typical for small and medium-sized casings and coronary but also for large-caliber casings, especially when the filling material is a sausage meat for cooked sausages, such as frankfurter sausages, or like hunting sausages , Ham, meat sausage, mortadella, yellow sausage or Lyoner, but also for smoked sausage and raw sausage such as coarse mettwurst, the latter being produced in particular in curved or ring-shaped casings made of cellulose without fiber reinforcement.

The food casing consists of a carrier tube based on cellulose and the coating provided on its inner wall to improve the peelability of the casing from the filling material.

The base material for the carrier tube is cellulose (cellophane, regenerated cellulose, cellulose hydrate) and is produced in the usual way as a seamless tube by coagulation and regeneration, preferably from viscose solution. It is also possible to use hoses with an adhesive seam, which are produced by folding a web and connecting the edges (EP-A-0 050 702, EP-A-0 058 240). A carrier tube made of cellulose with a fiber reinforcement, which is embedded, for example, in the form of a paper web in the wall of the carrier tube, is used for the use of the casing for producing sausages of the large caliber type of cooked sausage. For the production of curved or ring-shaped sausages, such as raw sausages, in particular coarse sausages, carrier tubes with a curved or rounded ring shape, so-called ring casings, which have no fiber reinforcement, are used. The curvature is produced, for example, by one-sided expansion of the hose during its manufacture, but other methods are also known (US Pat.

The food casing can be used as a flat tube for filling with contents. Ruched tubular casings, so-called caterpillars, can also be produced, using conventional gathering devices (US Pat. No. 3,988,804). It has been shown here that the inner coating not only achieves an improved separation effect between the filling material and the inner wall of the casing, but that there are also additional advantages when winding, storing, gathering and processing. The inner coating ensures that the hoses wound on a roll do not stick or stick. Even casing sections do not stick together during long storage and can be opened without problems before filling with sausage meat, especially on automatic filling machines. Furthermore, the hoses are particularly slippery and soft and can therefore be gathered easily.

According to the invention, the coating contains alginates, alginic acid and / or chitosans. Alginates are salts of alginic acid, especially alkali or alkaline earth salts. Alginic acid itself is a colorless, carboxyl group-containing polysaccharide with an average molecular weight between 100,000 and 240,000. Chemically, alginic acid consists of 1,4-glycosidically linked D-mannuronic acid units with occasional insertions of α-glycosidically bound L-guluronic acid units. Alginic acid as such is a natural product and finds in abundance in the brown algae of the sea.

Die Chitosane besitzen ein mittleres Molekulargewicht von etwa 400 000.The chitosans are a compound group that is derived from naturally occurring chitin. They result from deacetylation and partial depolymerization of chitin with the help of strong alkalis. Chemically, they are β-glycosidically bound poly-N-acetylglucosamines, the acetyl groups of which are saponified to a greater or lesser extent by the action of the strong alkalis. The chitosans have an average molecular weight of approximately 400,000.

The additives are added to the aqueous coating composition in amounts of 0.5 to 30% by weight, preferably 1 to 5% by weight, based on the total weight of the aqueous preparation solution.

To emulsify the additives, the usual emulsifiers, e.g. Alkyl sulfonates, alkyl aryl sulfonates, alkyl sulfates, alkyl aryl sulfates or nonionic emulsifiers such as ethoxylated alcohols or amines are added.

Monofatty acid esters or polyhydric alcohols such as sorbitol monoesters or alkanediols such as 1,2-propanediol are also suitable as emulsifiers. The emulsifiers are used in amounts of 5 to 50% by weight, based on the weight of the preparation solution. It has surprisingly been found that in particular the alkanediols, and here preferably 1,2-propanediol, have an additional stabilizing effect on the casings, in particular on the graffed casings (caterpillars), preferably on those which are made up of a more labile basic material.

Preparation solutions which, in addition to alginate, alginic acid and / or chitosan, contain both an oil and a wax have proven to be particularly suitable for types of peelings.

The food casing according to the invention is produced by the usual methods for producing food casings, in particular sausage casings, based on cellulose, which can be easily peeled off from the filling, in particular from the sausage mass.

The inner coating is applied to the inside of the tubular casing in the usual way, for example by pouring a coating liquid into the tubular casing (GB-A-1 201 830, US-A-2,901,358, DE-A-28 01 038, DE-C-30 12 250) or by spraying the coating liquid into the tubular casing during the shirring process, e.g. through the hollow shirthorn (US-A-3,451,827). The application temperature is usually equal to the ambient temperature, i.e. it is around 15 to 30 ° C.

The filling of the coating liquid into the tubular casing expediently takes place during the manufacture of the tubular casing, for example after the cellulose hydrate gel has been precipitated from viscose and before drying.

If the sausage casings according to the invention are filled with sausage meat, scalded and smoked during their intended use, the casings can be removed completely easily on automatic peeling devices. The coating according to the invention has proven itself in practice both in the case of cellulose casings and in the case of fiber-reinforced cellulose casings.

The invention is explained in more detail by the following examples, but without being restricted to the specifically illustrated embodiments.
