Abstract

A tubular or web-shaped casing material resistant to mold fungus comprising cellulose and a fungicidal content of glycerol monolaurate. Alkali metal salts of fatty acids and/or alkyl-, aryl- and/or alkyl-aryl-sulfonates are preferably used as the emulsifier. Also disclosed is a process for manufacturing the casing material described above and a fungicidal agent for cellulose casings comprising glycerol monolaurate.

Description

The invention relates to a mold-resistant casing material based on cellulose, to a process for its production and the use of glycerol monolaurate.

It is known to store food casings, in particular gathered sausage casings, so-called caterpillars, made of cellulose before they are processed with a high moisture content. The moisture content is usually more than 20% by weight, based on the casing, and enables the processing of these casings without prior washing. When these casings are stored before processing, the growth of undesired molds and other microorganisms on the cellulose casing is disadvantageously accelerated under these conditions.

However, there is also a risk of undesirable mold formation on the casing surface if the casing filled with foodstuffs is stored.

Dry sausages, dry sausages and raw sausages are often produced using the natural maturing process. In this process, the sausages are air-dried for a longer period of time after smoking, whereby water vapor emerges from the sausage mass through the casing wall to the outside. Due to the high humidity on the hull In this case, too, there is undesirable mold formation in the case of poor ventilation.

Other types of sausage such as Liver sausage types are often packaged in plastic bags. Here too, undesirable mold growth can lead to spoilage of the sausage.

To prevent mold growth on cellulose casings, ascorbic acid and sorbic acid and their salts, for example, have been described as fungicidal agents, the casing material being impregnated with aqueous solutions of these substances (US Pat. No. 2,979,410). However, these known agents are less suitable for casings that have to be washed or boiled during their processing, because they dissolve in water and are thus quantitatively detached from the casing material. There is also a risk that the substances have an unauthorized, preserving effect on the packaged food. Also for reasons of food law, a number of fungicidal compounds in packaging material for food are not permitted.

In addition, the antimicrobial effect of glycerol monolaurate has long been known. According to US Pat. No. 4,002,775, this compound is to be used in medicine, in the production of medicaments and cosmetics and in the preservation of foods. Although also the problem of mold growth in sausage casing len has been known for a long time and a problem has been intensively searched for, which is proven by a large number of publications, this connection has so far been ignored.

The present invention is therefore based on the object of specifying a casing material based on cellulose which is suitable as a sausage casing and has practically no tendency to become infected with undesirable molds and other microorganisms during storage in the moist state. A fungicidal agent is to be found which is easily accessible, can be used easily in terms of process technology, is harmless under food law and has a long-term fungicidal effect. The fungicidal agent should be particularly suitable for sausage casings and should not or only slightly detach during sausage production when the casing is watered, scalded or boiled, so that the processed sausage casing also contains a sufficient amount of fungicidal agent when storing the sausage and when the sausage ripens, there is also no undesirable mold.

Figure imgb0001
R =-(CH2)10-CH3 This object is achieved by the casing material mentioned in claim 1, by its use as food packaging (claim 8), in particular sausage casing, and by the method according to claim 9. It is also achieved by the use of glycerol monolaurate (claim 13):
Figure imgb0001
R = - (CH 2 ) 10 -CH 3

It is in the more stable α-form (I) and (II) as racemate (±) -0 1 -lauroylglycerol, partly also in the β-form (III).

Surprisingly, this substance shows excellent fungicidal activity on moist sausage casings based on cellulose, it not being investigated whether one or both optical antipodes (I) and (II) are responsible for the fungicidal activity. Glycerol monolaurate is likely to block specific enzymes in fungal metabolism. The active ingredient can be easily applied to the cellulose material in emulsified form and can hardly be removed by water.

The wrapping material preferably contains the fungicidal agent on the surface facing away from the food to be packaged, i.e. with tubular casings on the outside. The casing material consists of cellulose and is produced by known processes, in particular viscose.

Viscose is an alkaline solution of sodium cellulose xanthate and is usually produced by reacting the alkali cellulose obtained from cellulose and sodium hydroxide solution with carbon disulfide in an alkaline medium. After ripening, the viscose is placed on a tubular or web-shaped fiber body, e.g. a paper, applied or extruded in the form of a tube or web without fiber reinforcement. Then the viscose is spun, i.e. coagulates. The spinning bath contains, for example, sulfuric acid, sodium sulfate and / or ammonium sulfate.

In further stages, the optionally fiber-reinforced, web-shaped or tubular product is regenerated in an acidic medium to form cellulose hydrate in gel form, washed with water and treated with plasticizer. If necessary, after coating with anchoring agent and a film-forming polymer, the cellulose is dried to form regenerated cellulose to a water content of 5 to 15% by weight. An adhesive layer is required for the production of hoses from the sheet-like cellulose (EP-A-0 058 240).

The fungicidal agent is applied in emulsified form to the coagulated or regenerated, web-shaped or tubular cellulose hydrate gel or after drying to the regenerated cellulose, expediently simultaneously using a plasticizer for the cellulose, for example a polyol such as glycerol, in the emulsion incorporated. The application is carried out using devices which are conventional per se, for example with nozzles, rollers, doctor blades or coating baths.

Glycerol monolaurate can preferably be converted into a stable homogeneous emulsion in the melt with the addition of emulsifiers. As has been shown, the selection of the emulsifier is important in order to achieve an optimal fungicidal effect. Suitable emulsifiers are salts of fatty acids, in particular alkali salts of fatty acids having 10 to 20 carbon atoms, such as sodium laurate, stearate, oleate and palmitate, and alkali salts of alkyl, aryl and alkylarylsulfonates, in which the alkyl group is preferably unbranched and 3 has up to 13 carbon atoms and the aryl group is a benzene or naphthalene system. In contrast, ethoxylated sorbitan esters and alkyl, aryl and alkylaryl sulfates reduce the fungicidal activity of glycerol monolaurate. The emulsifier is used in an amount of 2 to 12, preferably 3 to 10% by weight, based on glycerol monolaurate.

A good fungicidal action is ensured if the amount of glycerol monolaurate on the casing material, in particular on the outer surface of the sausage casing, is at least 50 mg / m 2 . Upwards, the application quantity is practically freely selectable, although a basis weight of approximately 1000 mg / m 2 is only required in extreme cases and values of approximately 300 mg / m 2 normally represent the maximum limit that is necessary for the fungicidal activity. In most cases, a Basis weight of 80 to 200 mg / m 2 of the glycerol monolaurate used.

The amount of glycerol monolaurate can be applied in the usual way, e.g. control over the concentration of the emulsion used. The concentration range of glycerol monolaurate to be used depends on the condition of the substrate, namely whether the preparation is carried out on the not yet dried cellulose hydrate in gel form or on the dried regenerated cellulose. If the emulsion is applied to the not yet dried, gel-like cellulose material, a concentration between 1 and 3.5, preferably between 1.5 and 2% by weight of glycerol monolaurate should be selected; for the dried material (water content less than 15% by weight, based on the total weight), the concentration range for the glycerol monolaurate should be reduced to 0.5 to 2.5, preferably 0.8 to 1.5% by weight. In the latter case, the cellulose material is optionally dried again after the emulsion has been applied. The values given for the glycerol monolaurate relate to the total amount by weight of the emulsion.

In the usual dry conditions, in which the cellulose surface reaches a temperature of 80 to 120 ° C, the glycerol monolaurate is firmly bound to the surface. It can then only be partially removed by boiling in water for a long time. So much glycerol monolaurate remains on the surface of the cellulose after cooking that a sufficient fungicidal effect is guaranteed. The firm adhesion of the glycerol monolaurate to the cellulose surface is not only due to the low solubility in water, but is also likely to be due to the formation of hydrogen bonds between the two free OH groups of the glycerol monoester and the cellulose OH groups certainly favored by the transition of the glycerol monolaurate from its β-form (III) to its more stable α-form (I) or (II) at temperatures above its melting point.

After boiling in water for half an hour, 80 to 150 mg / m 2 of glycerol monolaurate are still found on the surface of the casing material from originally 120 to 180 mg / m 2 , and after four hours of treatment in water at 80 ° C., 50 to 110 mg / m 2 are found. These quantities are sufficient to prevent mold growth, for example in cooked and cooked sausages. Scalded sausage means, for example, hunting sausage, beer ham, meat sausage, mortadella, Lyoner or yellow sausage. Cooked sausages include both types of liver sausage, which require a gas-impermeable casing, and types of blood sausage, the casing of which must be permeable to smoke.

After inoculating the samples of cellulose treated with glycerol monolaurate with various mold spores (e.g. Aspergillus niger, Chaetomium globosum, Penicillium chrysogenum etc.) to demonstrate the fungicidal effect of glycerol monolaurate, the bacterial count drops at 70 to 75% rel. After 14 days of storage. Moisture and 20 * C from 10 6 to 10 3 . A preservative effect however, the food surrounded by the casing material does not exert glycerol monolaurate, so that this preparation complies with recommendation XXXVI, B VIII of the German Food Law.

In addition to glycerol monolaurate, it is also possible to use other agents with an antimicrobial spectrum, in particular with a bactericidal and / or fungicidal action, such as e.g. the mixtures or reaction products of water-insoluble resin and salts of organic acids known from US-A-3,617,312 and DE-A-32 40 847.

If the casing material is used as a sausage casing, it can be filled with sausage mass as a tube section or as a caterpillar.

Die Erfindung wird anhand der folgenden Beispiele näher erläutert:The invention is illustrated by the following examples:

Beispiel 1example 1

A fiber hose with a viscose (58 mm in diameter) on the outside is run through a watering trough containing a solution of the following composition after it has passed through coagulation and coagulation liquid and before entering the dryer for external coating.
  • 15 g / 1 glycerol monolaurate fused with 0.75 g sodium laurate as an emulsifier 100 ml / l glycerin 900 ml / l water

A solution is filled into the inside of the tube made of cellulose hydrate gel, which contains a conventional means of improving the adhesion between the casing and the sausage mass.

The tube is then dried as usual and moistened to a water content of 8 to 10% by weight.

The amount applied on the outer surface is 110 mg / m 2 glycerol monolaurate, determined gravimetrically after detachment with methylene chloride. The hose tied on one side is filled with sausage meat of the salami type for use as a sausage casing and the sausages are then inoculated on their outer surface with mold to demonstrate the fungicidal action of glycerol monolaurate; after 6 weeks of ripening, no growth of these unwanted molds can be determined.

Beispiel 2Example 2

  • 18 g/l Glycerinmonolaurat/Emulgator (Beispiel 1) 100 ml/l Glycerin
  • 900 ml/l Wasser
A fiber paper bent into a tube is provided with viscose on the inside and outside and the viscose is coagulated and regenerated. The cellulose hydrate tube obtained (diameter 60 mm) is passed for external coating in the gel state in front of the dryer entrance through a solution of the following composition:
  • 18 g / l glycerol monolaurate / emulsifier (example 1) 100 ml / l glycerin

A solution is filled into the interior of the tube, which contains a conventional adhesion-promoting resin. The tube is dried in the inflated state and then coated on the inside with PVDC dispersion, from which, after drying again, a gas-impermeable closed film is formed.

The application amount on the outer surface is 140 mg / m 2 glycerol monourate.

Liver sausage meat is filled into tube sections tied on one side for use as sausage casings. To demonstrate the fungicidal activity of glycerol monolaurate, the sausages are inoculated with mold spores, packed in a polyethylene bag and stored under normal conditions. After a storage period of 6 weeks, there is still no mold infestation in the sausage casing.

Beispiel 3Example 3

  • 12 g/1 Glycerinmonolaurat/Emulgator (Beispiel 1) 100 ml/l Glycerin
  • 900 ml/l Wasser
A tube of regenerated cellulose reinforced with fiber paper inlay, water content 8% by weight, based on the total weight of the tube (diameter 60 mm), which has a gas-tight, closed film made of PVDC on the inside, is used for external coating by a solution of the following composition hazards:
  • 12 g / 1 glycerol monolaurate / emulsifier (example 1) 100 ml / l glycerol
  • 900 ml / l water

Danach wird der Schlauch erneut getrocknet. Die Auftragsmenge beträgt 180 mg/m2 Glycerinmonolaurat. The hose is then dried again. The application amount is 180 mg / m 2 glycerol monolaurate.

Boiled sausage meat is filled into the tubular casing sections that are tied on one side for use as a sausage casing. To demonstrate the fungicidal action of glycerol monolaurate, the sausages are inoculated with mold spores and stored under normal conditions; there is no mold growth.

Beispiel 4Example 4

    • 120 ml Epichlorhydrin-Polyaminpolyamid-Harz, 20 gew.-%ige Lösung (®Resamin HW 601, Herst. Cassella)
    • 15 g Kaliumsorbat und
    • 100 ml Glycerin eingerührt.
The cellulose hydrate tube in the gel state of example 2 is run through an impregnation trough containing a solution which is prepared as follows before it enters the dryer.
  • Be in 713.5 ml of water
    • 120 ml epichlorohydrin-polyamine polyamide resin, 20% by weight solution (®Resamin HW 601, manufacturer Cassella)
    • 15 g of potassium sorbate and
    • 100 ml of glycerin stirred in.

This solution is then mixed with vigorous stirring with 66.5 ml of an emulsion containing 15 g glycerol monolaurate / emulsifier (example 1).

A solution is filled into the interior of the tube, which contains the usual means of improving the adhesion between the casing and the sausage mass. The tube is then dried in the inflated state, then sprayed with water to a moisture content of 24 to 26% and gathered into caterpillars. When dried, the epichlorohydrin-polyamine polyamide resin is cured and changes to its water-insoluble form. The moist caterpillar is tightly packed in a water vapor-tight foil bag and stored for approx. 1 month. There is no mold infestation.

Sausage meat of the noble salami type is then filled into these caterpillars. The finished sausages are inoculated with mold spores to demonstrate the fungicidal effect of glycerol monolaurate and stored under normal conditions. Even after a storage period of 6 weeks, no growth of undesirable molds can be observed.

The casing material of the invention has the advantage that the fungicidal action is maintained over long periods of time, even if the material comes into intensive contact with water. However, no preservative effect of the fungicidal agent on the food packaged with the casing material can be determined. Likewise, a negative influence on the physical properties of the casing material by the fungicidal agent is not detectable. There is also no concern that the fungicide will be ingested by humans with the food. Glycerin monolaurate is also an easily accessible compound and is commercially available. It can be applied to the casing material by simple procedural measures.

Of particular interest is the fungicidal agent for use in sausage casings with a water vapor and gas impermeable layer, which are intended for boiled sausage-type and cooked sausage-type sausages, in sausage casings for sausages that are smoked, and in sausage casings that are before their processing stored in a moist state (water content above 20% by weight).
