Claims (3)

1. Verfahren zur Extraktion von Rübensaft, insbesondere durch Diffusion mit vorheriger Behandlung der Rübenschnitzel durch Kalziumionen, dadurch gekennzeichnet, dass man die vorherige Behandlung der Rübenschnitzel mit einer wässrigen Lösung von Kalziumsaccharat bei einer Temperatur unterhalb von 15 °C vornimmt.
2. Verfahren gemäss Anspruch 1, dadurch gekennzeichnet, dass es sich bei dem Kalziumsaccharat um das Kalziummonosaccharat handelt.
3. Verfahren gemäss Anspruch 1 oder 2, dadurch gekennzeichnet, dass man die wässrige Lösung des Kalziumsaccharats durch Zugabe von gebranntem Kalk zum Diffusionssaft erhält.
