Изобретение относится к микробиологической промышленности и касается способа получения лимонной кислоты и ее солей, которые могут использоваться в пищевой промышленности, медицине, фармакологии. Задача изобретения заключается в интенсификации процесса производства лимонной кислоты и повышении его эффективности. Решение поставленной задачи обеспечивается за счет применения технологических приемов, способствующих улучшению качества посевного материала и оптимизации условий культивирования и выделения лимонной кислоты, что позволяет в условиях периодической ферментации повысить выход лимонной кислоты и при непрерывном режиме увеличить скорость протока до 0,05-0,06 ч. Сущность предлагаемого изобретения заключается в следующем. На стадии приготовления посевного материала с целью улучшения его качества используют наполнитель конидий, содержащий измельченные отруби, пептон, измельченный сахар, измельченную лимонную кислоту. Применение данного наполнителя конидий обеспечивает не только сохранность спор, но и способствует повышению их биохимической активности. Использование данного наполнителя наряду со снижением расхода конидий способствует повышению биосинтеза лимонной кислоты на 7% и увеличению активности прорастания (всхожести) конидий на 15%. На стадии ферментации с целью создания оптимальных по минеральному составу условий культивирования для гриба Aspergillus niger и повышения выхода лимонной кислоты в среду культивирования вводят азот в виде аммонийных солей, сульфат железа и неионогенный ПАВ (твин-40).
