Abstract

Microorganisms that possess a glucose isomerase activity are immobilized on a protein-containing support or carrier, which is either blood serum or blood plasma. The cells are mixed with fresh, spray-dried, freeze-dried or frozen serum or plasma in a weight-to-volume ratio of between 1 : 1 and 1 : 10, after which they are immobilized by the addition of glutaraldehyde. The material treated in this way can be used for converting glucose to fructose, e.g. by passing a 2-3 M glucose syrup continuously through a column containing the immobilized cells. The supply of the substrate is preferably regulated in such a way that 40-50% of the glucose is converted into fructose. The preparation obtained by the process according to the invention has a high enzyme activity, a favourable pH optimum, a high temperature optimum and a good thermal stability.
