in Wasser aufgeschwemmte Maismehl oder Maisnachmehl nicht über 65° erhitzt wird,
da sonst die im Mais festgestellte Glukosidase zugrunde geht, ein Ferment, das Quellstärke
zu Traubenzucker abbaut. Ein weiteres Merkmal des Verfahrens ist de Abtrennung der
Eiweißkörper und des etwa vonhandenen
Spelzes (IIaisnachmehl) durch
einen speziellen Fidtrationsvorgang. Die in Frage kommende diastatisch verzuckerte
eiweißhaltige Lösung wird mit Hilfe einer Filterpresse oder einer Fruchtpresse,
am besten einer hydraulischen. Presse, durch zahlreiche, übereinander gelagerte
Filtersäcke mit großer Oberfläche filtriert, wodurch die Eiweißstoffe und sonstigen
Verunreinigungen weitgehend zurückgehalten werden. Die Säcke müssen während der
Filtration öfter gewendet wenden. Der klar filtrierte Zuckersaft wird sodann in
dampfbeheizten Kesseln, am besten in Vakuumverdampfern, eingedampft. Die Eindampfung

Verflüs@ssgung der Masse wird erfindungsgemäß wiedersolangeDampf eingeleitet, bis
