Description
Method for preserving fruit juices It is known that fruit juices concentrate by freezing out. This process fails to get the juices Concentrate until it is self-sustaining because the residue in the ice is too high and in many cases the eutectic temperature does not have a sufficiently high dry matter can be achieved by freezing out. One must therefore reduce the residual concentration by evaporation or by vacuum evaporation, both processes by which the actual The aim of the freeze concentration, the preservation of the aroma stotte, is left.
It is obvious that the fruit juice concentrate obtained by freezing out to preserve it by adding sugar. But this has the disadvantage that it is more durable juices with a high content of cane sugar are only achieved with a relatively high dry matter content and to bridge the dry matter interval between freeze concentrate and self-sustaining juice an over-sweetening of the fruit juice concentrate and a crystallization of sugar, which lowers the sales value of the product, can hardly be avoided. This is particularly important if the starting juice contains little fructose. The cane sugar can often crystallize out with commercial fruit syrups watch.
The present invention is based on the object of a saccharification of the fruit juice concentrate obtained by freezing without bringing about these disadvantages. This problem is solved by not dealing with the usual Beet sugar (Cane sugar, sucrose), but with a sugar that has six carbon atoms contains in the molecule, especially fructose, glucose or invert sugar. * It was found that as a result of the higher osmotic pressure of invert sugar solutions compared to cane sugar solutions of the same concentration, when hexoses are added the shelf life of the juices can be achieved at lower dry matter contents than when using cane sugar. The effect of the hexoses is so high that z. B. an amount of sugar to add sugar to a 500% freeze concentrate until the shelf life is reached which is in the order of magnitude of the dry matter content of the concentrate is sufficient.
This makes the concentrate too sweetened and too strong Prevents the dilution of flavorings. In addition, over-sweetening is avoided there the sweetening power of hexoses is less than that of cane sugar.
In general, fruit juices that contain a certain amount of Containing pectin and mucilage and a considerable amount of fructose, with one The glucose contained in the invert sugar crystallizes out until the shelf life is reached sugared juices are not to be expected. In some cases, however, it can be more practical To be on the safe side, not pure invert sugar, but mixtures of invert sugar and to use sucrose, which have a higher solubility than the two Components. The addition of sugar can either be in powdered form or else take place as sugar declarations. The latter has the advantage that the sugar is easier to explain can mix in, but the disadvantage that the amount of sugar required increases must become.
While it is already known in the concentration of fruit juices by freezing out the juice before freezing out to lower the melting point add some invert sugar. In the present case, however, it is not around this known problem, but rather tim the saccharification for the purpose of preserving the Concentrates. Accordingly, much larger quantities of invert sugar are required here than in the known method. Apart from that, it has added sugar before freezing the disadvantage that the final concentration achievable by freezing, as already mentioned, is not sufficient to achieve a shelf life of the concentrate, moreover a certain amount of sugar is lost with the remaining ice. Example to ioog. of a 5% freezing rate of a fruit juice are used to achieve this The shelf life requires about 55 g of invert sugar. One would use sucrose bring, then 87.5g sugar would have to be added to achieve the shelf life, which have a sweetness equivalent to that of about 10 g invert sugar.
