Description
Verfahien zur Herstellung eines Gärungsgetränkes aus Malz und Molke Gegenstand des Patents 671 137 ist ein Verfahren zur Herstellung eines Gärungsgetränkes aus Malz und Molke, welches sich dadurch auszeichnet, daß ein erheblicher Teil der bei der Herstellung normaler Biere üblichen Malzmenge durch Molke ersetzt wird. Versuche mit eingedickter und mit getrockneter Molke haben das überraschende Ergebnis gezeigt, :daß _ aus diesen Stoffen, nach Wiederverdünnung mit Wasser, eine Flüssigkeit erhalten wird, welche sich für den mit dem Patent 671 i37 verfolgten Zweck wesentlich besser eignet als frische Molke. Offenbar unterliegen beim Eindicken der Molke die kolloiden Bestandteile, insbesondere die Eiweißkörper, einer weitgehenden Veränderung, so daß sie nachträglich nicht wieder in .der ursprünglichen Form in Lösung gehen, was beispielsweise dadurch kenntlich wird, ,daß eine in dieser Weise hergestellte Verdünnung glatt durch ein normales Filter filtrierbar ist, während frische Molke; selbst nach Erhitzung, sich nur sehr schwer filtrieren läßt. Wird eine Verdünnung von eingedickter oder getrockneter Molke erhitzt, so fallen die an sich schon in niedriger dispersem Zustand enthaltenen Eiweißkörper ungleich leichter und in festerer Form aus als aus einer vorher nicht eingeengten Molke.Experiments with thickened and dried whey have shown the surprising result: that _ is obtained from these materials, after dilution with water, a liquid which is much better suited for the objective pursued by the patent 671 i37 purpose as fresh whey.
