bei etwa 8o° C mit Wasser auslaugt, :dem zwecks Verhinderung des Auslaugens von
Pektin während der Entbitterung Aluminiumsalze zugesetzt sind. Ferner ist vorgeschlagen
worden, die Entbitterung durch Behandlung nur mit Fruchtsäften vorzunehmen. Diese
Verfahren erfordern eine lange Behandlungszeit oder haben den Nachteil, daß die
Bitterstoffe in die Flüssigkeit übergehen und aus .dieser erst wieder entfernt werden
müssen, wenn :die Flüssigkeit zu Nahrungsmitteln Verwendung finden soll. Es ist
auch bekannt, schweflige Säure als Konservierungsmittel für Citrusfrüchte zu benutzen.
So hat man zerkleinerten Zitronenschweflige Säure zugesetzt, um .diese zu konservieren

der mit 1/4 °1o schwefliger Säure versetzt ist, behandelt. Die schweflige Säure
kann dabei in Form einer Lösung oder auch unmittelbar als Gas dem Saft zugeführt
werden. In etwa i Stunde sind sowohl die Schalen als auch die Flüssigkeit frei von
bitterem Geschmack.
