Zur Erreichung des (pH) von 3,5 ist ein Zusatz einer etwa roo°1oigen Essigsäure in der Menge von o,oo5 g für je r ccm Extrakt erforderlich; in der Regel ist die WasserstofF-ionenkonzentration von 3,5 das Optimum zur Erreichung der Haltbarkeit.
