Der dadurch gewonnene Pektinextrakt wird mechanisch gereinigt und aufkonzentriert. Das hierbei entstehende, konzentrierte Flüssigpektin wird unter Beibehaltung bestimmter Verfahrensparameter weiterverarbeitet, z. B. entestert; sobald der gewünschte Veresterungsgrad erreicht ist, wird dann das Pektin mit Hilfe von Alkohol ausgefällt und somit aus seiner wäßrigen Lösung getrennt. Das bei dieser alkoholischen Fällung gewonnene Reinpektin wird dann weiterverarbeitet, beispielsweise ausgepreßt und getrocknet, vermahlen und gemischt. Vor einiger Zeit war es teilweise noch übliche die Pektine aus ihren wäßrigen Lösungen mit Hilfe von Aluminiumsalzen auszufällen.
