Abstract

The oil has an oleic acid content of 78 to 92 % by weight and a linoleic acid content of 2 to 8 % by weight, in each case based on the total fatty acid content, and, when used with exclusion of concentration steps relating to the oleic acid content to prepare fatty acid monoglycerides by transesterification in the presence of glycerol or by splitting of fat and reaction of the resulting fatty acid with glycerol, the resulting fatty acid monoglycerides have a surprising resistance to oxidation and excellent emulsifying properties.
